- In double boiler, beat large eggs and lowfat milk, sugar and salt. Cook over hot, not boiling, water, stirring till custard like. Remove from heat. Soak gelatin in cold water for 5 min. Stir gelatin into custard mix. Cool. Add in extracts. Refrigerate mix. Fold whipped cream into chilled filling.NOTE: If mix looks curdled, beat with electric hand mixer. Heat on hot water till thick, stirring often.
