Dale's Flour Chicken Enchiladas

Ingredientes

  • 1 med onion diced
  • 3 c. cooked chicken, minced
  • 1 Tbsp. butter or possibly margarine, melted
  • 1 jar sliced mushrooms, liquid removed (4 ounce.)
  • 8 ounce lowfat sour cream
  • 1 can cream of chicken soup, undiluted
  • 1 can minced green chilies, liquid removed (4 ounce.)
  • 1/2 tsp oregano
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 10 x flour tortillas, (7-inch)
  • 1 c. sharp Cheddar cheese, shredded
  • 1/3 c. lowfat milk

Direcciones

  1. Saute/fry onion in butter in a large saucepan till tender. Stir in the next nine ingredients, mixing well. Spoon about 1/2 c. chicken mix in the middle of each tortilla. Roll up tortilla; place, seam side down, in a lightly greased glass baking dish (9x13x2). Combine remaining ingredients; spoon over tortillas. Sprinkle some cheese on top. Bake (uncovered) at 350 degrees for 35 min.
