.%20So,%20I%20chose%20to%20do%20this%20challenge%20in%20two%20parts.%20The%20first%20day,%20I%20made%20a%20bunch%20of%20little%20square%20cookies%20(each%201%20square%20inch%20in%20size),%20which%20gave%20me%20until%20day%20two%20to%20decide%20what%20my%20%22September%20theme%22%20would%20be.%3C/p%3E%3Cp%3EThe%20September%202010%20Daring%20Bakers%E2%80%99%20challenge%20was%20hosted%20by%20Mandy%20of%20%E2%80%9CWhat%20the%20Fruitcake?!%E2%80%9D%20Mandy%20challenged%20everyone%20to%20make%20Decorated%20Sugar%20Cookies%20based%20on%20recipes%20from%20Peggy%20Porschen%20and%20The%20Joy%20of%20Baking.%3C/p%3E%3Cp%3EBasic%20Sugar%20Cookies%3C/p%3E%3Cp%3E(Makes%20Approximately%2036x%2010cm%20/%204%22%20Cookies)%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3E%E2%80%A2%20Cream%20together%20the%20butter,%20sugar%20and%20any%20flavorings%20you%E2%80%99re%20using.%20Beat%20until%20just%20becoming%3C/p%3E%3Cp%3Ecreamy%20in%20texture.%3C/p%3E%3Cp%3E%E2%80%A2%20Beat%20in%20the%20egg%20until%20well%20combined,%20make%20sure%20to%20scrape%20down%20the%20sides%20of%20the%20bowl.%3C/p%3E%3Cp%3EAdd%20the%20sifted%20flour%20and%20mix%20on%20low%20until%20a%20non%20sticky%20dough%20forms.%3C/p%3E%3Cp%3E%E2%80%A2%20Knead%20into%20a%20ball%20and%20divide%20into%202%20or%203%20pieces.%3C/p%3E%3Cp%3E%E2%80%A2%20Roll%20out%20each%20portion%20between%20parchment%20paper%20to%20a%20thickness%20of%20about%205mm%20(0.2%20inch)%3C/p%3E%3Cp%3E%E2%80%A2%20Refrigerate%20for%20a%20minimum%20of%2030mins.%3C/p%3E%3Cp%3E%E2%80%A2%20Once%20chilled,%20peel%20off%20parchment%20and%20place%20dough%20on%20a%20lightly%20floured%20surface.%3C/p%3E%3Cp%3E%E2%80%A2%20Cut%20out%20shapes%20with%20cookie%20cutters%20or%20a%20sharp%20knife.%3C/p%3E%3Cp%3E%E2%80%A2%20Arrange%20shapes%20on%20parchment%20lined%20baking%20sheets%20and%20refrigerate%20for%2030mins%20-%201%20hour.%3C/p%3E%3Cp%3E%E2%80%A2%20Re-roll%20scraps%20and%20follow%20the%20above%20process%20until%20all%20scraps%20are%20used%20up.%3C/p%3E%3Cp%3E%E2%80%A2%20Preheat%20oven%20to%20180%C2%B0C%20(160%C2%B0C%20Fan%20Assisted)%20/%20350%C2%B0F%20/%20Gas%20Mark%204.%3C/p%3E%3Cp%3E%E2%80%A2%20Bake%20until%20golden%20around%20the%20edges,%20about%208-15mins%20depending%20on%20the%20size%20of%20the%20cookies.%3C/p%3E%3Cp%3E%E2%80%A2%20Once%20completely%20cooled,%20decorate%20as%20desired.%3C/p%3E%3Cp%3ESo...%20again,%20with%20the%20theme...%20hmm...%20that%20was%20a%20tricky%20one%20to%20figure%20out.%20After%20making%20the%20cookies,%20my%20mind%20started%20running%20trying%20to%20figure%20out%20how%20to%20theme%20my%20cookies%20for%20September.%20Then,%20after%20a%20long%20hard%20think,%20I%20remembered%20that%20September%2013th,%202010%20was%20the%2025th%20Anniversary%20of%20the%20release%20of%20Super%20Mario%20Bros.%20So,%20I%20used%20the%20cute%20little%20squares%20as%20%22bits%22%20and%20created%20an%208-bit%20Mario%20by%20using%20various%20colors%20of%20icing%20sugar%20to%20decorate%20the%20cookies%20with%20the%20outline-fill/flood%3C/p%3E%3Cp%3ERoyal%20Icing%3C/p%3E%3Cp%3E-%202%C2%BD%20-%203%20cups%20Confectioner%E2%80%99s%20Sugar,%20unsifted%3C/p%3E%3Cp%3E-%202%20Large%20Egg%20Whites%3C/p%3E%3Cp%3E-%202%20tsp%20Lemon%20Juice%3C/p%3E%3Cp%3E-%201%20tsp%20Almond%20Extract,%20optional%3C/p%3E%3Cp%3E%E2%80%A2%20Beat%20egg%20whites%20with%20lemon%20juice%20until%20combined.%3C/p%3E%3Cp%3E%E2%80%A2%20Sift%20the%20icing%20sugar%20to%20remove%20lumps%20and%20add%20it%20to%20the%20egg%20whites.%3C/p%3E%3Cp%3E%E2%80%A2%20Beat%20on%20low%20until%20combined%20and%20smooth.%3C/p%3E%3Cp%3E%E2%80%A2%20Use%20immediately%20or%20keep%20in%20an%20airtight%20container.%3C/p%3E%3Cp%3ENote:%203%20cups%20of%20confectioner's%20sugar%20is%20good%20for%20piping%20the%20outline,%20and%20by%20adding%20a%20little%20bit%20of%20water%20to%20the%20mixture%20the%20icing%20is%20perfect%20for%20flooding%20the%20outline)%3C/p%3E%3Cp%3ELook%20at%20all%20the%20cute%20little%20colored%20squares!%20They%20were%20a%20bit%20time%20consuming%20to%20decorate,%20but%20in%20the%20end%20I%20think%20they%20were%20worth%20every%20bit%20of%20effort.%20If%20I%20were%20to%20do%20this%20again,%20I'd%20probably%20pipe%20the%20icing%20a%20bit%20closer%20to%20the%20borders%20of%20the%20cookies%20so%20that%20there%20would%20be%20less%20cookie%20visible%20when%20the%208-bit%20character%20is%20put%20together.%20Other%20than%20that,%20the%20cookies%20and%20icing%20were%20delicious%20and%20my%20sisters%20really%20enjoyed%20picking%20apart%20Mario,%20piece%20by%20piece%20%5E_%5E%3C/p%3E){kind=link}
