%20you%20can%20take%20a%20peak%20into%20my%20other%20obsessions.%3C/p%3E%3Cp%3EBut,%20even%20though%20I%20haven't%20been%20blogging%20recipes%20recently,%20I%20will%20always%20do%20my%20best%20to%20keep%20up%20to%20date%20with%20the%20Daring%20Baker%20Challenges.%20So,%20here's%20my%20Stollen%20Wreath%20for%20December's%20challenge.%3C/p%3E%3Cp%3EThe%202010%20December%20Daring%20Bakers%E2%80%99%20challenge%20was%20hosted%20by%20Penny%20of%20Sweet%20Sadie%E2%80%99s%20Baking.%20She%20chose%20to%20challenge%20Daring%20Bakers%E2%80%99%20to%20make%20Stollen.%20She%20adapted%20a%20friend%E2%80%99s%20family%20recipe%20and%20combined%20it%20with%20information%20from%20friends,%20techniques%20from%20Peter%20Reinhart%E2%80%99s%20book.........and%20Martha%20Stewart%E2%80%99s%20demonstration.%3C/p%3E%3Cp%3EStollen%20Wreath%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3E1.%20In%20a%20small%20bowl,%20soak%20the%20raisins%20in%20the%20rum%20(or%20in%20the%20orange%20juice%20from%20the%20zested%20orange)%20and%20set%20aside.%3C/p%3E%3Cp%3E2.%20Pour%20%C2%BC%20cup%20warm%20water%20into%20a%20small%20bowl,%20sprinkle%20with%20yeast%20and%20let%20stand%205%20minutes.%20Stir%20to%20dissolve%20yeast%20completely.%3C/p%3E%3Cp%3E3.%20In%20a%20small%20saucepan,%20combine%201%20cup%20milk%20and%2010%20tbsp%20butter%20over%20medium%20-%20low%20heat%20until%20butter%20is%20melted.%20Let%20stand%20until%20lukewarm,%20about%205%20minutes.%3C/p%3E%3Cp%3E4.%20Lightly%20beat%20eggs%20in%20a%20small%20bowl%20and%20add%20lemon%20and%20vanilla%20extracts.%3C/p%3E%3Cp%3E5.%20In%20a%20large%20mixing%20bowl,%20stir%20together%20the%20flour,%20sugar,%20salt,%20cinnamon,%20orange%20and%20lemon%20zests.%3C/p%3E%3Cp%3E6.%20Then%20stir%20in%20the%20yeast/water%20mixture,%20eggs%20and%20the%20lukewarm%20milk/butter%20mixture.%20This%20should%20take%20about%202%20minutes.%20It%20should%20be%20a%20soft,%20but%20not%20sticky%20ball.%20When%20the%20dough%20comes%20together,%20cover%20the%20bowl%20with%20either%20plastic%20or%20a%20tea%20cloth%20and%20let%20rest%20for%2010%20minutes.%207.%20Add%20in%20mixed%20peel,%20soaked%20fruit%20and%20almonds%20and%20mix%20with%20hands%20to%20incorporate.%20Here%20is%20where%20you%20can%20add%20the%20cherries,%20if%20using.%20Be%20delicate%20or%20your%20dough%20will%20turn%20red%3C/p%3E%3Cp%3E8.%20Sprinkle%20flour%20on%20counter,%20transfer%20dough%20to%20the%20counter,%20and%20begin%20kneading%20to%20distribute%20the%20fruit%20evenly,%20add%20additional%20flour%20if%20needed.%20The%20dough%20should%20be%20soft%20and%20satiny,%20tacky%20but%20not%20sticky.%20Knead%20for%20~8%20minutes.%20You%20can%20tell%20when%20the%20dough%20is%20kneaded%20enough%20%E2%80%93%20a%20few%20raisins%20will%20start%20to%20fall%20off%20the%20dough%20onto%20the%20counter%20because%20at%20the%20beginning%20of%20the%20kneading%20process%20the%20dough%20is%20very%20sticky%20and%20the%20raisins%20will%20be%20held%20into%20the%20dough%20but%20when%20the%20dough%20is%20done%20it%20is%20tacky%20which%20isn't%20enough%20to%20bind%20the%20outside%20raisins%20onto%20the%20dough%20ball.%3C/p%3E%3Cp%3E9.%20Lightly%20oil%20a%20large%20bowl%20and%20transfer%20the%20dough%20to%20the%20bowl,%20rolling%20around%20to%20coat%20it%20with%20the%20oil.%20Cover%20the%20bowl%20with%20plastic%20wrap.%3C/p%3E%3Cp%3E10.%20Put%20it%20in%20the%20fridge%20overnight.%20The%20dough%20becomes%20very%20firm%20in%20the%20fridge%20but%20it%20does%20rise%20slowly%E2%80%A6%20the%20raw%20dough%20can%20be%20kept%20in%20the%20refrigerator%20up%20to%20a%20week%20and%20then%20baked%20on%20the%20day%20you%20want.%20Shaping%20The%20Dough%3C/p%3E%3Cp%3E11.%20Let%20the%20dough%20rest%20for%202%20hours%20after%20taking%20out%20of%20the%20fridge%20in%20order%20to%20warm%20slightly.%2012.%20Line%20a%20sheet%20pan%20with%20parchment%20paper.%3C/p%3E%3Cp%3E13.%20Preheat%20oven%20to%20moderate%20350%C2%B0F/180%C2%B0C/gas%20mark%204%20with%20the%20oven%20rack%20on%20the%20middle%20shelf.%3C/p%3E%3Cp%3E14.%20Punch%20dough%20down,%20roll%20into%20a%20rectangle%20about%2016%20x%2024%20inches%20and%20%C2%BC%20inch%20thick.%3C/p%3E%3Cp%3E15.%20Starting%20with%20a%20long%20side,%20roll%20up%20tightly,%20forming%20a%20long,%20thin%20cylinder.%3C/p%3E%3Cp%3E16.%20Transfer%20the%20cylinder%20roll%20to%20the%20sheet%20pan.%20Join%20the%20ends%20together,%20trying%20to%20overlap%20the%20layers%20to%20make%20the%20seam%20stronger%20and%20pinch%20with%20your%20fingers%20to%20make%20it%20stick,%20forming%20a%20large%20circle.%20You%20can%20form%20it%20around%20a%20bowl%20to%20keep%20the%20shape.%2017.%20Using%20kitchen%20scissors,%20make%20cuts%20along%20outside%20of%20circle,%20in%202-inch%20(5%20cm)%20intervals,%20cutting%202/3%20of%20the%20way%20through%20the%20dough.%3C/p%3E%3Cp%3E18.%20Twist%20each%20segment%20outward,%20forming%20a%20wreath%20shape.%20Mist%20the%20dough%20with%20spray%20oil%20and%20cover%20loosely%20with%20plastic%20wrap.%3C/p%3E%3Cp%3E19.%20Proof%20for%20~2%20hours%20at%20room%20temperature,%20or%20until%20about%201%C2%BD%20times%20its%20original%20size.%3C/p%3E%3Cp%3E20.%20Bake%20the%20stollen%20for%2020%20minutes,%20then%20rotate%20the%20pan%20180%20degrees%20for%20even%20baking%20and%20continue%20to%20bake%20for%2020%20to%2030%20minutes.%20The%20bread%20will%20bake%20to%20a%20dark%20mahogany%20color,%20should%20register%20190%C2%B0F/88%C2%B0C%20in%20the%20center%20of%20the%20loaf,%20and%20should%20sound%20hollow%20when%20thumped%20on%20the%20bottom.%2021.%20Transfer%20to%20a%20cooling%20rack;%20brush%20the%20top%20with%20melted%20butter%20while%20hot%3C/p%3E%3Cp%3E22.%20Immediately%20tap%20a%20layer%20of%20powdered%20sugar%20over%20the%20top%20through%20a%20sifter.%3C/p%3E%3Cp%3E23.%20Wait%20for%201%20minute,%20then%20tap%20another%20layer%20over-top.%3C/p%3E%3Cp%3E24.%20The%20bread%20should%20be%20coated%20generously%20with%20the%20powdered%20sugar.%3C/p%3E%3Cp%3E25.%20Let%20cool%20at%20least%20an%20hour%20before%20serving.%20Coat%20the%20stollen%20in%20butter%20and%20icing%20sugar%203%20times,%20since%20the%20many%20coatings%20help%20keep%20the%20stollen%20fresh.%3C/p%3E%3Cp%3E26.%20When%20completely%20cool,%20store%20in%20a%20plastic%20bag.%20Or%20leave%20it%20out%20uncovered%20overnight%20to%20dry%20out%20slightly,%20German%20style.%3C/p%3E%3Cp%3EThis%20recipe%20was%20challenging%20for%20me,%20as%20I'm%20not%20that%20gifted%20when%20it%20comes%20to%20baking%20with%20yeast.%20As%20my%20regular%20readers%20may%20know,%20yeast%20and%20I%20do%20not%20get%20along%20very%20well...%20we're%20fair-weather%20friends,%20one%20might%20say.%20But%20thanks%20to%20my%20patience%20and%20sticking%20to%20the%20recipe%20to%20a%20%22t%22,%20I%20was%20able%20to%20produce%20a%20Stollen%20Wreath%20which%20I%20was%20most%20proud%20of%20sharing%20with%20my%20family%20and%20friends%20for%20a%20Christmas%20potluck.%20The%20wreath%20was%20wonderfully%20moist%20and%20sweet,%20thanks%20to%20the%20many%20layers%20of%20butter%20and%20icing%20sugar,%20and%20it%20was%20the%20perfect%20addition%20to%20our%20holiday%20banquet.%20I%20will%20definitely%20be%20making%20this%20recipe%20again,%20come%20next%20winter-time.%3C/p%3E){kind=link}
