,%20and%20this%20is%20the%20perfect%20time%20to%20feature%20a%20Canadian%20dessert%20since%20the%202010%20Winter%20Olympics%20are%20starting%20in%20Vancouver%20very%20soon!%3C/p%3E%3Cp%3EWhat%20can%20I%20say?%20This%20was%20another%20great%20Daring%20Bakers'%20challenge.%20Lauren%20gave%20us%20the%20option%20of%20making%20the%20graham%20wafers%20(or%20graham%20crackers)%20gluten%20free%20or%20with%20flour.%20I%20originally%20planned%20to%20make%20them%20gluten%20free,%20but%20ultimately%20I%20used%20flour%20just%20to%20save%20myself%20a%20trip%20to%20the%20grocery%20store.%20Yes,%20I%20know.%20It%20was%20slightly%20lazy%20of%20me.%20But%20can%20you%20really%20call%20someone%20who%20spends%20the%20time%20to%20make%20graham%20crackers%20from%20scratch%20lazy?%3C/p%3E%3Cp%3EHomemade%20Graham%20Crackers%20(adapted%20from%20101%20Cookbooks)%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E2%20cups%20plus%202%20tablespoons%20all-purpose%20flour%3C/p%3E%3Cp%3E1/2%20cup%20whole%20wheat%20flour%3C/p%3E%3Cp%3E1%20cup%20dark%20brown%20sugar,%20lightly%20packed%3C/p%3E%3Cp%3E1%20teaspoon%20baking%20soda%3C/p%3E%3Cp%3E3/4%20teaspoon%20kosher%20salt%3C/p%3E%3Cp%3E7%20tablespoons%20unsalted%20butter,%20cut%20into%201-inch%20cubes%20and%20frozen%3C/p%3E%3Cp%3E1/3%20cup%20mild-flavored%20honey,%20such%20as%20clover%3C/p%3E%3Cp%3E5%20tablespoons%20whole%20milk%3C/p%3E%3Cp%3E2%20tablespoons%20pure%20vanilla%20extract%20(I%20would%20cut%20this%20way%20back%20if%20I%20made%20these%20again.%20Just%20a%20teaspoon%20would%20be%20plenty.)%3C/p%3E%3Cp%3EPreparation%3C/p%3E%3Cp%3ECombine%20flour,%20brown%20sugar,%20baking%20soda,%20and%20salt%20in%20food%20processor%20fitted%20with%20the%20steel%20blade.%20Pulse%20to%20incorporate.%20Add%20the%20butter,%20and%20pulse%20until%20the%20mixture%20is%20the%20consistency%20of%20coarse%20meal.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20whisk%20together%20the%20honey,%20milk,%20and%20vanilla%20extract.%20Add%20to%20the%20flour%20mixture,%20and%20pulse%20a%20few%20times%20until%20the%20dough%20barely%20comes%20together.%20It%20will%20be%20very%20soft%20and%20sticky.%3C/p%3E%3Cp%3ETurn%20the%20dough%20out%20onto%20a%20lightly%20floured%20work%20surface,%20and%20pat%20the%20dough%20into%20a%20rectangle%20about%201%20inch%20thick.%3C/p%3E%3Cp%3EDivide%20the%20rectangle%20in%20half%20using%20a%20bench%20scraper%20or%20knife,%20and%20wrap%20each%20half%20in%20plastic%20and%20chill%20until%20firm,%20about%202%20hours%20or%20overnight.%3C/p%3E%3Cp%3ETake%20out%20one%20package%20of%20dough%20and%20roll%20the%20dough%20into%20a%20long%20rectangle%20about%201/8%20inch%20thick%20on%20a%20lightly%20floured%20countertop.%20The%20dough%20will%20be%20sticky,%20so%20flour%20as%20necessary.%20Cut%20dough%20into%20whatever%20size%20crackers%20you'd%20like.%20Gather%20any%20scraps%20together,%20and%20set%20aside.%3C/p%3E%3Cp%3EPlace%20the%20crackers%20on%20one%20or%20two%20parchment-lined%20baking%20sheets,%20and,%20if%20desired,%20sprinkle%20with%20cinnamon-sugar%20(3%20tablespoons%20of%20sugar%20mixed%20with%201%20teaspoon%20of%20cinnamon).%20Chill%20until%20firm,%20about%2030%20to%2045%20minutes.%20Repeat%20with%20the%20second%20batch%20of%20dough.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%3C/p%3E%3Cp%3EGather%20the%20scraps%20together%20into%20a%20ball,%20chill%20until%20firm,%20and%20reroll.%20Dust%20the%20surface%20with%20more%20flour,%20and%20roll%20out%20the%20dough%20to%20get%20about%20two%20or%20three%20more%20crackers.%20(You%20can%20also%20freeze%20the%20leftover%20dough%20if%20you're%20all%20crackered%20out%20by%20this%20point.)%3C/p%3E%3Cp%3EIf%20desired,%20mark%20a%20vertical%20line%20down%20the%20middle%20of%20each%20cracker,%20being%20careful%20not%20to%20cut%20through%20the%20dough.%20Using%20a%20toothpick%20or%20skewer,%20prick%20the%20dough%20to%20form%20two%20dotted%20rows%20about%201/2%20inch%20for%20each%20side%20of%20the%20dividing%20line.%3C/p%3E%3Cp%3EBake%20each%20sheet%20of%20crackers%20in%20preheated%20oven%20for%2010%20to%2012%20minutes,%20or%20until%20browned%20and%20slightly%20firm%20to%20the%20touch,%20rotating%20the%20sheets%20halfway%20through%20to%20ensure%20even%20baking.%3C/p%3E%3Cp%3EI%20thought%20these%20had%20a%20much%20better%20texture%20than%20store-bought%20graham%20crackers.%20They%20were%20crunchy%20but%20also%20slightly%20chewy.%20I%20also%20think%20they%20look%20much%20more%20appetizing.%20What%20do%20you%20think?%3C/p%3E%3Cp%3EIt%20made%20me%20a%20little%20sad%20to%20know%20I%20had%20to%20crush%20up%20my%20newly%20made%20graham%20crackers,%20but%20the%20Nanaimo%20bars%20came%20out%20so%20good%20that%20I%20didn't%20miss%20the%20grahams%20all%20that%20much%20in%20the%20end!%3C/p%3E%3Cp%3EBelow%20is%20the%20recipe%20Lauren%20provided%20with%20a%20few%20modifications%20I%20made%20to%20simplify%20the%20process%20(such%20as%20skipping%20the%20double%20boiler).%20I%20also%20opted%20to%20toast%20the%20almonds%20and%20coconut,%20which%20you%20don't%20have%20to%20do,%20but%20I%20prefer%20the%20stronger,%20nuttier%20flavor%20that%20comes%20with%20the%20toasting,%20not%20to%20mention%20the%20added%20crunch.%3C/p%3E%3Cp%3ENanaimo%20Bars%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EBottom%20Layer%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EBottom%20Layer:%20Melt%20unsalted%20butter,%20sugar,%20and%20cocoa%20in%20a%20small%20pot%20over%20low%20heat.%20Add%20egg,%20and%20stir%20to%20cook%20and%20thicken.%20Remove%20from%20heat.%20Stir%20in%20crumbs,%20nuts,%20and%20coconut.%20Press%20firmly%20into%20an%20ungreased%208-%20by%208-inch%20pan.%3C/p%3E%3Cp%3EMiddle%20Layer:%20In%20bowl%20of%20electric%20stand%20mixer,%20cream%20butter,%20heavy%20cream,%20pudding%20mix,%20and%20confectioners'%20sugar%20together.%20Continue%20beating%20until%20light%20in%20color.%20Spread%20over%20bottom%20layer.%3C/p%3E%3Cp%3ETop%20Layer:%20Melt%20chocolate%20and%20unsalted%20butter%20in%20microwave.%20Cool,%20pour%20over%20middle%20layer,%20and%20chill.%3C/p%3E%3Cp%3EIt's%20best%20to%20take%20the%20bars%20out%20of%20the%20fridge%20about%2015%20minutes%20before%20you%20plan%20to%20cut%20them,%20otherwise%20they%20will%20be%20too%20hard%20to%20cut%20and%20the%20top%20chocolate%20layer%20will%20shatter.%3C/p%3E%3Cp%3ENote:%20You%20can%20freeze%20the%20bars...%20and%20you%20may%20want%20to%20so%20you%20don't%20eat%20them%20all%20in%20one%20sitting.%20Another%20option%20is%20to%20bring%20them%20to%20the%20office%20and%20share%20them%20with%20coworkers.%3C/p%3E%3Cp%3EI%20loved%20these!%20The%20bottom%20layer%20is%20rich%20and%20crunchy.%20The%20middle%20is%20supposed%20to%20be%20a%20custard,%20but%20mine%20came%20out%20more%20like%20frosting%20--%20no%20complaints%20there.%20And%20who%20doesn't%20love%20a%20nice%20layer%20of%20chocolate%20to%20top%20the%20whole%20thing%20off?%20If%20you're%20planning%20to%20watch%20the%202010%20Olympics,%20you%20might%20want%20to%20make%20these%20to%20snack%20on%20during%20the%20Opening%20Ceremonies!%3C/p%3E%3Cp%3EThank%20you,%20Lauren!%3C/p%3E){kind=link}
