,%20but%20you%20also%20can't%20deny%20the%20healthy%20goodness%20of%20almond%20butter.%20%20It%20never%20really%20occurred%20to%20me%20to%20make%20my%20own%20until%20I%20saw%20this%20month's%20Daring%20Cooks'%20Challenge.%3C/p%3E%3Cp%3EThe%20July%202010%20Challenge%20was%20hosted%20by%20Margie%20of%20More%20Please%20and%20Natashya%20of%20Living%20in%20the%20Kitchen%20with%20Puppies.%20They%20challenged%20Daring%20Cooks%20to%20make%20their%20own%20nut%20butter%20from%20scratch,%20and%20use%20the%20nut%20butter%20in%20a%20recipe.%20I%20opted%20for%20the%20almond%20butter%20-%20natch%20-%20and%20made%20the%20delicious%20Indian-scented%20chicken%20dish%20that%20was%20adapted%20from%20The%20Food%20Network's%20Butter%20Chicken%20recipe.%3C/p%3E%3Cp%3EI%20made%20further%20adaptations%20to%20the%20challenge%20recipe,%20using%20almond%20milk%20instead%20of%20regular,%20and%20cutting%20down%20on%20the%20(real)%20butter.%20%20I%20also%20used%20chicken%20thighs,%20as%20I%20prefer%20the%20tasty%20meatiness%20of%20dark%20chicken%20meat,%20and%20found%20it%20a%20great%20foil%20to%20the%20rich%20sauce.%3C/p%3E%3Cp%3EChicken%20with%20Curried%20Tomato%20Almond%20Sauce%3C/p%3E%3Cp%3E4%20servings%3C/p%3E%3Cp%3E*You%20will%20have%20plenty%20of%20almond%20butter%20left%20over.%20%20Use%20it%20as%20a%20healthy%20alternative%20to%20peanut%20butter,%20or%20in%20protein%20shakes.%3C/p%3E%3Cp%3E1.%20%20Turn%20on%20food%20processor,%20and%20slowly%20add%20almonds%20in%20a%20steady%20stream.%20Grind%20the%20nuts%20in%20the%20processor%20until%20they%20form%20a%20paste%20or%20butter.%20This%20will%20take%20about%2015%20to%2020%20minutes%20for%20whole%20almonds;%20the%20skin%20of%20whole%20almonds%20will%20leave%20dark%20flecks%20in%20the%20butter.%3C/p%3E%3Cp%3E2.%20%20Pat%20chicken%20thighs%20dry%20and%20sprinkle%20with%20a%20bit%20of%20salt%20and%20pepper%20to%20taste.%20Heat%20olive%20oil%20a%20large%20nonstick%20skillet%20over%20medium-high%20heat.%20Add%20the%20chicken;%20saut%C3%A9%20about%205%20minutes%20on%20each%20side%20or%20until%20cooked%20through.%20Cool%20slightly,%20slice%20chicken%20thighs;%20set%20aside%20on%20clean%20plate%20and%20keep%20warm.%3C/p%3E%3Cp%3E3.%20%20Stir%20garam%20masala,%20ginger,%20cinnamon,%20and%20pepper%20together%20in%20a%20small%20bowl%20to%20make%20spice%20blend.%20Set%20aside.%3C/p%3E%3Cp%3E4.%20%20In%20the%20same%20skillet,%20melt%20the%20butter%20in%20large%20nonstick%20skillet%20over%20medium-low%20heat.%20Add%20the%20onion%20and%20cook%20gently%20for%20several%20minutes%20to%20infuse%20the%20butter%20and%20oil%20with%20onion%20flavor.%20Add%20the%20spice%20blend%20and%20garlic%20and%20cook%20for%201%20minute%20or%20till%20fragrant,%20stirring%20constantly.%20Add%20the%20tomato%20sauce,%20stir%20well,%20and%20bring%20to%20boil.%20Reduce%20heat%20to%20simmer.%20Remove%20onions%20and%20discard.%3C/p%3E%3Cp%3E5.%20%20Whisk%20in%20almond%20butter%20and%20milk%20until%20thoroughly%20combined%20with%20tomato%20sauce.%20The%20almond%20butter%20is%20thick%20so%20it%20takes%20a%20while%20to%20make%20a%20smooth%20sauce.%20Return%20to%20simmer.%20Add%20broth%20(or%20water)%20to%20sauce%20to%20reach%20desired%20consistency;%20return%20to%20simmer.%20Add%20more%20broth%20(or%20water)%20as%20needed%20to%20thin%20sauce%20as%20desired.%3C/p%3E%3Cp%3E5.%20%20Stir%20frozen%20peas%20(if%20using)%20into%20sauce.%20Transfer%20sliced%20chicken%20to%20sauce.%20Simmer%20gently%20for%20a%20few%20minutes%20until%20peas%20and%20chicken%20are%20heated%20through.%3C/p%3E%3Cp%3E6.%20%20Serve%20chicken%20and%20sauce%20over%20rice.%20Garnish%20with%20chopped%20parsley%20and/or%20sliced%20almonds%20if%20desired.%3C/p%3E%3Cp%3EWe%20neither%20used%20the%20rice%20nor%20the%20garnish,%20but%20just%20had%20the%20chicken%20straight%20up,%20with%20a%20lovely%20green%20salad%20on%20the%20side.%20Thanks,%20daring%20Cooks,%20for%20a%20delicious%20dinner%20treat!%3C/p%3E){kind=link}
