Receta Deep Fried Cheese And Cauliflower Fritters With Cauliflower

- The preparation is similar to which of choux pastry but allow the mix to cold a little before adding the cheese.
- Bring the water and butter to the boil.
- Add in the sifted flour and beat in with a wooden spoon till the mix leaves the side of the pan. Remove from the heat.
- Beat the Large eggs together and add in to the mix in three stages, beating well each time.
- When the mix is hot, add in cheese, cauliflower, salt and pepper.
- Deep fry in warm oil till just runny in the middle.
- Cauliflower Puree
- Puree the cauliflower in a processor. Bring cream to the boil and allow to thicken before adding to the puree. Season with salt and pepper and place on the plate with the fritter.
- Sherry Caramel
- Boil together till caramelised. Add in a little water and remove from the heat. Pour around cauliflower puree.
