Great potluck or bbq salad for warm weather.

Ingredientes

  • 1 lb. favorite small pasta or elbow macaroni
  • 1 large rib celery, minced
  • 2 scallions, sliced thin
  • 2 hardboiled eggs, chopped
  • 1 tbs. sweet relish
  • 2 tbs. chopped parsley
  • 1 tbs. vinegar
  • 1 cup mayonnaise
  • 2 tsp. Dijon mustard
  • 1/2 cup shredded cheese (I like Monterrey Jack)
  • salt and pepper to taste
  • optional: green peas, chopped olives, bell pepper
  • garnish: paprika

Direcciones

  1. Cook pasta "done," not al dente
  2. Dry it with a paper towel.
  3. Toss with other ingredients in a bowl, refrigerate several hours.
  4. Sprinkle on paprika, serve.
