Receta Deli-Style Pasta Salad
Great potluck or bbq salad for warm weather.
Ingredientes
- 1 lb. favorite small pasta or elbow macaroni
- 1 large rib celery, minced
- 2 scallions, sliced thin
- 2 hardboiled eggs, chopped
- 1 tbs. sweet relish
- 2 tbs. chopped parsley
- 1 tbs. vinegar
- 1 cup mayonnaise
- 2 tsp. Dijon mustard
- 1/2 cup shredded cheese (I like Monterrey Jack)
- salt and pepper to taste
- optional: green peas, chopped olives, bell pepper
- garnish: paprika
Direcciones
- Cook pasta "done," not al dente
- Dry it with a paper towel.
- Toss with other ingredients in a bowl, refrigerate several hours.
- Sprinkle on paprika, serve.
