%20with%20a%20Golden%20Delicious%20Apple.%3C/p%3E%3Cp%3ENow%20I%20am%20not%20a%20big%20fan%20of%20the%20Golden%20Delicious%20Apple,%20simply%20because%20they%20are%20so%20sweet.%20%20I%20loved%20them%20as%20a%20kid,%20but%20only%20when%20they%20were%20green.%20%20And%20let's%20face%20it...%20Produce%20moves%20around%20this%20country%20so%20fast%20now%20days%20that%20the%20farmers%20don't%20pick%20things%20as%20green%20as%20they%20use%20to.%20%20Which%20has%20it's%20pluses,%20but%20in%20this%20case,%20the%20Golden%20Delicious%20Apples%20in%20the%20stores%20are%20almost%20always%20fully%20ripe.%20%20But%20for%20this%20recipe,%20I%20thought%20I%20could%20get%20away%20with%20the%20apple%20being%20on%20the%20sweeter%20side%20cause%20I%20was%20gonna%20hit%20it%20hard%20with%20a%20crisp%20white%20wine%20and%20%22savor-ize%22%20it%20up%20with%20some%20Parmigiano-Reggiano%20and%20Mascarpone.%3C/p%3E%3Cp%3EIf%20those%20ingredients%20ring%20any%20bells%20you%20probably%20guessed%20right....%20I%20made%20an%20Apple%20Risotto.%3C/p%3E%3Cp%3EThe%20verdict%20on%20the%20experiment?%20%20I%20thought%20it%20was%20tasty...%20So%20did%20my%20little%20brother...%20Savory%20with%20a%20hint%20of%20spiced%20sweetness.%20%20Then%20again,%20we%20both%20like%20Cheddar%20on%20our%20Apple%20Pie%20so%20this%20dish%20is%20a%20natural%20fit.%20%20My%20sister-in-law%20is%20not%20a%20risotto%20fan,%20no%20matter%20what%20the%20flavor%20so%20she%20opted%20out%20completely.%20%20Dad%20was%20on%20the%20fence%20and%20Mom%20hated%20it.%20%20I%20don't%20know...%20I%20would%20call%202%20%22likes%22,%201%20undecided%20and%201%20%22no%22%20a%20fairly%20favorable%20reception%20considering%20this%20side%20dish's%20unorthodoxy.%3C/p%3E%3Cp%3EI%20am%20still%20trying%20to%20decide%20if%20I%20should%20have%20forewent%20the%20%22hint%20of%20cinnamon%22%20and%20opted%20for%20a%20%22whisper%20of%20nutmeg%22%20instead.%20%20Personally%20do%20not%20care%20for%20nutmeg%20with%20apple.%20%20Mace,%20yes,%20Nutmeg,%20no.%20%20I%20am%20really%20more%20of%20a%20Cinnamon%20person.%20%20I%20love%20sneaking%20Cinnamon%20in%20savory%20dishes%20when%20no%20one%20is%20looking.%20%20Any%20excuse%20to%20buck%20the%20%22system%22%20that%20has%20regulated%20poor%20Cinnamon%20to%20only%20sweets.%20%20Nutmeg,%20on%20the%20other%20hand,%20shows%20up%20in%20Bechamel%20as%20well%20as%20Spaetzle,%20Quiche%20(Lorraine%20and%20Florentine)%20and%20Scalloped%20Potatoes%20(like%20Pommes%20de%20Terre%20%C3%A0%20la%20Dauphinoise)%20with%20a%20frequency%20that%20attests%20to%20it's%20escape%20from%20the%20same%20predicament%20as%20the%20ill-fated%20Cinnamon.%3C/p%3E%3Cp%3EDelicious%20Risotto%3C/p%3E%3Cp%3EBring%20the%20Chicken%20Stock%20to%20a%20simmer%20in%20a%20small%20saucepan%20and%20dice%20the%20apple.%3C/p%3E%3Cp%3EIn%20a%20large%20skillet,%20heat%201%20TB%20of%20the%20Olive%20oil%20over%20medium-low%20flame.%3C/p%3E%3Cp%3EAdd%20the%20apple%20and%20cook%20for%20about%2010%20minutes,%20just%20until%20it%20begins%20to%20soften%20slightly.%3C/p%3E%3Cp%3ERemove%20the%20apple%20from%20the%20skillet%20and%20set%20aside.%3C/p%3E%3Cp%3EAdd%20the%20remaining%201%20TB%20Olive%20Oil%20to%20the%20pan%20along%20with%20the%20Butter.%3C/p%3E%3Cp%3EWhen%20foaming%20subsides,%20add%20the%20shallot%20and%20sweat%20until%20soft.%3C/p%3E%3Cp%3EAdd%20the%20Rice%20and%20saute%20for%20a%20couple%20minutes,%20until%20it%20begins%20to%20smell%20nutty.%3C/p%3E%3Cp%3EAdd%20the%20Wine%20and%20stir%20until%20it%20is%20absorbed.%3C/p%3E%3Cp%3EBegin%20adding%20stock,%201%20ladle%20at%20a%20time,%20stirring%20until%20each%20ladel-ful%20has%20been%20absorbed%20before%20adding%20the%20next.%3C/p%3E%3Cp%3EAfter%2010%20minutes%20of%20cooking%20(when%20the%20risotto%20is%20about%201/2%20done)%20add%20the%20diced%20Apple%20to%20the%20rice,%20then%20continue%20adding%20stock%20and%20stirring%20until%20the%20risotto%20is%20still%20a%20little%20al%20dente.%20(you%20may%20not%20use%20all%20the%20stock)%3C/p%3E%3Cp%3EAdd%20the%20Parmigiano-Reggiano,%20Mascarpone%20and%20Cinnamon%20or%20Nutmeg.%3C/p%3E%3Cp%3ECover%20and%20allow%20to%20rest%20for%203-5%20minutes.%3C/p%3E%3Cp%3EStir%20everything%20together%20and%20serve.%3C/p%3E%3Cp%3EPeter%20Brady%20was%20right,%20Apple%20and%20Pork%20really%20do%20play%20together%20well.%3C/p%3E%3Cp%3ESo%20the%20next%20time%20you%20are%20serving%20Pork%20chops,%20or%20Pork%20Loin%20chops%20or%20even%20a%20Pork%20Tenderloin,%20I%20urge%20you%20to%20give%20this%20a%20try.%3C/p%3E%3Cp%3EYep,%20Pork%20Chopsh%20and%20Apple%20Rishoto,%20it's%20Shwell.%3C/p%3E%3Cp%3EMangia!!%3C/p%3E){kind=link}
