Ingredientes

  • 3 x Egg yolks
  • 1/2 x Lemon, rind of
  • 1/2 ounce Vanilla seeds
  • 6 x Egg whites
  • 100 gm Sugar
  • 40 gm Flour
  • 40 gm Butter, melted
  • 1 ounce Butter for frying
  • 1 sprg mint for garnish

Direcciones

  1. Blend the egg yolks, lemon rind and vanilla seeds well together. Whip the egg whites with the sugar till stiff and fold them carefully into the egg yolk mix.
  2. Sift the flour over and fold it in to the mix, whilst slowly adding the warm butter.
  3. Heat the frying butter in an omelette pan and place in the omelette mix.
  4. Smooth the top with a wet palette knife and cook gently on the stove for 2 min. Place into the oven for a further 5-7 min.
