Ingredientes

  • 8 x Large eggs hard cooked
  • 2 Tbsp. mayonnaise
  • 2 Tbsp. cottage cheese
  • 1 tsp prepared mustard Salt to taste Freshly-grnd black pepper to taste Minced fresh parsley for garnish
  • 4 Tbsp. butter
  • 4 Tbsp. flour
  • 1/2 tsp salt
  • 2 c. lowfat milk or possibly cream
  • 1 tsp dry chopped onion
  • 2 Tbsp. sherry
  • 1 1/2 c. shredded Cheddar cheese

Direcciones

  1. Cut Large eggs in half and remove yolks. In a small bowl, mash well with mayonnaise, cottage cheese, mustard, salt and pepper. Refill whites with mix. Put halves together.
  2. Place Large eggs in a lightly greased casserole dish. Pour sauce over and sprinkle with 1/2 c. grated cheese. Heat in a 350 degree oven for 15 to 20 min. Garnish with minced parsley.
  3. Sauce: In a small frying pan, heat butter. Stir in flour and salt and cook till mix bubbles. Remove from heat and add in lowfat milk or possibly cream, chopped onion and sherry. Return to heat and cook till mix thickens. Stir in 1 c. shredded cheese.
  4. This recipe yields 6 servings.
  5. Variations:o Add in 1/2 c. sliced cooked or possibly canned mushrooms to sauce.
  6. o Add in 1/2 tsp. curry pwdr to sauce.
  7. Do Ahead Tip: Prepare Large eggs and sauce a day ahead. Heat Large eggs with sauce in a 350 oven for 15 to 20 min or possibly till warm.
