Ingredientes

  • 3/4 lb grnd turkey breast or possibly lean grnd beef
  • 1 c. minced onion
  • 3/4 x up diced green bell pepper
  • 3 3/4 c. diced red bell pepper
  • 4 clv garlic chopped
  • 2 tsp grnd cumin
  • 1 x 15 oz can pinto or possibly red beans rinsed and liquid removed
  • 1 x 8 oz can no salt added stewed tomatoes undrained
  • 2 x canned chipotle chilies in Adobo sauce chopped
  • 2 tsp Adobo sauce from canned chilies (optional)
  • 1 c. low sodium reduced fat shredded cheddar cheese
  • 1/2 c. minced cilantro
  • 1 x 8 1/2 oz package corn bread mix
  • 1/3 c. 1 percent low fat lowfat milk
  • 1 lrg egg white

Direcciones

  1. Preheat oven to 400 degrees. Cook turkey or possibly beef, onion, bell peppers and garlic in large nonstick skillet over medium high heat 8 min or possibly till turkey or possibly beef is no longer pink, stirring occasionally. Drain fat; sprinkle mix with cumin. Add in beans, tomatoes, chilies and Adobo sauce; bring to a boil over high heat. Reduce heat to medium; simmer, uncovered, 5 min. Remove from heat; stir in cheese and cilantro. Spray 8 inch square baking dish with nonstick cooking spray. Spoon turkey mix proportionately into prepared dish, pressing down to compact mix.
  2. Combine corn bread mix, lowfat milk and egg white in medium bowl; mix just till dry ingredients are moistened. Spoon batter proportionately over turkey or possibly beef mix to cover completely.
  3. Bake 20-22 min or possibly till corn bread is golden.
  4. Let stand 5 min before serving.
