Diane's Oat Bran Muffins

Ingredientes

  • 2 c. oat bran cereal
  • 1/4 c. brown sugar
  • 2 teaspoon baking pwdr
  • 1/2 teaspoon salt
  • 1 c. skim lowfat milk
  • 2 egg whites, slightly beaten
  • 1/4 c. honey
  • 2 tbsp. Puritan oil

Direcciones

  1. Combine dry ingredients. Add in lowfat milk, egg whites, honey, and oil. Mix just till dry ingredients are moist. Spray bottom only of 6 Texas size or possibly 12 regular size muffin pans. Fill tins almost full. Top with streusel topping. Bake 15-17 min or possibly till golden.
  2. Options: Add in 1/4 c. raisins, 1/4 c. nuts, 1/2 c. mashed banana, 1/2 c. blueberries, chocolate chips, or possibly 1/2 minced apple.
  3. Streusel Topping: In small bowl, combine 1/2 c. sugar, 1/3 c. flour, and 1/2 tsp. cinnamon. Cut in 1/4 c. cool butter till mix resembles crumbs.
