Receta Diet Eggplant Caviar

Ingredientes
- 1 lg. eggplant
- 1/4-1/3 c. chopped onions
- 1 teaspoon chopped green pepper
- 1 c. diced tomatoes
- 1/4 c. extra virgin olive oil
- 1 teaspoon lemon juice
- 1/2-1 teaspoon sugar
- Freshly grnd pepper
Direcciones
- Peel eggplant. Either bake in 400 degree oven for the 1 hour or possibly cook in microwave on high till soft sufficient to mash (approximately 5-10 min).
- Mash eggplant and add in other ingredients. Mix well. Serve with quartered pita bread.
