Ingredientes

  • 1 ounce Butter
  • 1 ounce Shallots, pared, chopped
  • 2 ounce Capers, minced
  • 2 ounce Dry sherry
  • 3 ounce Clam juice
  • 1 ounce Lemon juice
  • 6 ounce Heavy cream
  • 2 ounce Butter, chilled
  • 1 Tbsp. Dill weed, minced Salt and pepper, to taste

Direcciones

  1. Heat butter in stainless sauce pan. Add in shallots; saute/fry till soft. Add in capers and sherry; heat to simmering. Add in lemon juice, clam juice and heavy cream; reduce by half. Reduce heat to low; shave in butter till sauce is rich and shiny. Add in dill; season with salt and pepper.
