%3C/p%3E%3Cp%3EMonday%20we%20were%20at%20Nate's%20parent's%20house%20for%20the%20big%20family%20Christmas%20get-together.%3C/p%3E%3Cp%3EEverybody%20brought%20something.%20There%20was%20a%20Baked%20Ziti,%20penne%20with%20sundried%20tomatoes,%20scalloped%20potatoes,%20venison%20sausage,%20salad,%20bread,%20and%20fruit.%20And%20then%20we%20brought%20pigs%20in%20a%20blanket%20and%20mashed%20potatoes.%20Then%20there%20was%20dessert.%20:)%20We%20brought%20Santa's%20chocolate%20chip%20cookies,%20layered%20mint%20fudge%20and%20butterscotch%20marshmallow%20fudge.%20My%20sister-in-law%20and%20her%20husband%20made%20a%20fabulously%20divine%20caramel%20cake.%20I%20ate%20one%20slice%20of%20that%20and%20was%20done.%20I%20didn't%20even%20try%20the%20other%20varieties%20of%20cookies%20that%20others%20brought.%20:)%3C/p%3E%3Cp%3ETuesday%20I%20made%20Tortellini%20Alfredo%20Casserole%20using%20an%20adapted%20version%20of%20a%20recipe%20I%20found%20in%20Recipe.com%20magazine.%3C/p%3E%3Cp%3EIn%20a%20large%20pot%20of%20boiling%20water,%20cook%20the%20dried%20tortellini%20over%20medium-high%20heat%20for%208%20minutes.%20(This%20is%20not%20the%20recommended%20cooking%20time%20on%20the%20package,%20but%20remember%20that%20the%20tortellini%20will%20be%20cooking%20again%20in%20the%20casserole%20and%20you%20don't%20want%20it%20getting%20too%20mushy.)%20When%20the%20cooking%20time%20has%20elapsed,%20drain%20the%20tortellini.%3C/p%3E%3Cp%3EMeanwhile,%20toss%20the%20onions%20in%20a%20pan%20with%20a%20tablespoon%20of%20butter%20and%20saute.%20Once%20the%20onions%20became%20translucent,%20turn%20the%20heat%20down%20and%20let%20them%20caramelize.%3C/p%3E%3Cp%3EWhile%20the%20onions%20are%20going,%20get%20a%20pan%20heated%20over%20medium%20heat%20and%20add%20the%20bacon.%20When%20the%20onions%20have%20a%20nice%20golden%20color%20on%20them,%20add%20them%20to%20the%20pan%20with%20bacon%20and%20turn%20the%20heat%20down%20just%20a%20bit.%20Stir%20occasionally.%3C/p%3E%3Cp%3EHeat%20oven%20to%20375%20degrees.%20Get%20out%20a%202%201/2-quart%20casserole%20dish%20and%20set%20it%20aside.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20stir%20Alfredo%20sauce,%20water%20and%20pepper.%3C/p%3E%3Cp%3EPour%201%20cup%20of%20the%20Alfredo%20mixture%20into%20the%20casserole%20dish.%3C/p%3E%3Cp%3EArrange%20half%20of%20the%20tortellini%20in%20a%20layer%20over%20the%20sauce;%20add%20the%20broccoli.%3C/p%3E%3Cp%3ETop%20with%20remaining%20tortellini.%20Sprinkle%20the%20bacon%20and%20onions%20overtop.%3C/p%3E%3Cp%3EPour%20the%20remaining%20sauce%20over%20everything.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20blend%20bread%20crumbs%20and%20olive%20oil.%3C/p%3E%3Cp%3ESprinkle%20over%20the%20top%20of%20the%20casserole.%3C/p%3E%3Cp%3EBake%20at%20375%20degrees%20F%20for%2020%20to%2025%20minutes.%20Check%20on%20it%20at%20about%2015%20minutes%20in.%20If%20the%20top%20is%20beginning%20to%20brown%20too%20much,%20cover%20with%20tin%20foil%20and%20return%20to%20oven.%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E%3Cp%3EWednesday%20we%20went%20out%20to%20eat%20at%20California%20Pizza%20Kitchen.%3C/p%3E%3Cp%3EAnd%20it%20was%20just%20as%20good%20as%20I%20remember.%20:)%20Abby%20ate%20the%20kids'%20honey%20and%20chicken%20pizza%20with%20no%20sauce.%20I've%20never%20thought%20to%20put%20honey%20on%20a%20pizza,%20but%20that%20would%20be%20why%20they%20are%20a%20successful%20restaurant%20and%20I%20am%20not.%20haha%3C/p%3E%3Cp%3EThursday%20we%20ate%20breakfast%20for%20dinner%20--%20crepes!%3C/p%3E%3Cp%3E1%201/4%20cup%20flour%3C/p%3E%3Cp%3E1/4%20tsp%20salt%3C/p%3E%3Cp%3E2%20eggs%3C/p%3E%3Cp%3E1%20cup%20milk%3C/p%3E%3Cp%3Esplash%20vanilla%20extract%3C/p%3E%3Cp%3E2%20Tbsp%20olive%20oil%3C/p%3E%3Cp%3EWhisk%20the%20eggs%20in%20a%20large%20mixing%20bowl.%3C/p%3E%3Cp%3EWhisk%20in%20the%20milk%20and%20vanilla%20extract.%3C/p%3E%3Cp%3EWhisk%20in%20the%20flour%20and%20salt%20all%20at%20once.%3C/p%3E%3Cp%3ENow%20whisk%20in%20the%20olive%20oil.%3C/p%3E%3Cp%3EHeat%20a%20pan%20over%20medium-high%20heat.%20Using%20softened%20butter%20and%20a%20papertowel,%20grease%20the%20pan.%3C/p%3E%3Cp%3ETurn%20the%20heat%20down%20to%20medium%20and%20pour%20approximately%201/4%20cup%20of%20the%20batter%20in%20the%20middle%20of%20the%20pan.%20Turn%20the%20pan%20in%20a%20circular%20motion%20to%20help%20the%20batter%20spread%20evenly.%3C/p%3E%3Cp%3ELet%20the%20crepe%20cook%20for%20a%20couple%20minutes.%20It%20is%20ready%20to%20be%20flipped%20when%20the%20edges%20become%20dry%20and%20start%20curling.%3C/p%3E%3Cp%3EI%20like%20to%20flip%20my%20crepes%20in%20the%20air%20(and%20the%20girls%20find%20it%20entertaining%20too%20:)%20)%20but%20if%20you%20are%20going%20to%20use%20a%20spatula,%20take%20care%20not%20to%20rip%20or%20tear%20the%20crepe.%20They%20can%20be%20very%20fragile.%3C/p%3E%3Cp%3EThe%20crepes%20should%20have%20a%20nice%20%22doily%22%20pattern%20to%20them%20when%20flipped.%20They%20will%20only%20need%20a%20minute%20or%20two%20on%20the%20second%20side.%3C/p%3E%3Cp%3EThe%20only%20limit%20to%20fillings%20for%20the%20crepes%20is%20your%20imagination.%20We%20like%20the%20sweet%20crepes.%20For%20instance,%20peanut%20butter%20or%20Nutella%20with%20mashed%20bananas%20and%20cinnamon.%20(It's%20also%20a%20good%20way%20to%20use%20those%20bananas%20that%20are%20starting%20to%20brown.)%20Then%20roll%20it%20up%20and%20top%20with%20some%20maple%20syrup.%20Mmmm%20:)%3C/p%3E%3Cp%3EFriday%20we%20had%20pizza...but%20we%20mighta%20cut%20a%20few%20corners.%20;)%3C/p%3E%3Cp%3EWhile%20we%20were%20at%20the%20grocery%20late%20Friday%20afternoon,%20Nate%20and%20I%20decided%20that%20we%20were%20going%20to%20be%20short%20on%20time%20and%20rather%20than%20skip%20Pizza%20and%20A%20Movie%20Night%20we%20ought%20to%20pick%20up%20some%20frozen%20pizzas%20and%20then%20%22customize%22%20them%20once%20we%20got%20home.%20Believe%20me,%20this%20definetly%20saved%20time.%3C/p%3E){kind=link}
