%20that%20seasons%20the%20broth%20is%20richer%20and%20fuller%20than%20miso;%20it%E2%80%99s%20perfectly%20complemented%20by%20the%20heat%20of%20kochukaru%20(chili%20powder).%20The%20warm-to-the-last-bite%20heat%20from%20the%20ceramic%20ttukbaegi%20serving%20dish%20is%20just%20a%20bonus.%3C/p%3E%3Cp%3EYou%20don%E2%80%99t%20need%20a%20ceramic%20ttukbaegi%20to%20make%20or%20enjoy%20doenjang%20jjigae,%20but%E2%80%94like%20eating%20bibimbap%20out%20of%20a%20hot%20stone%20bowl%20instead%20of%20a%20cold%20metal%20or%20plastic%20one%E2%80%94your%20food%20stays%20steaming%20hot%20for%20the%20whole%20meal.%20This%20is%20a%20major%20perk%20if%20you%E2%80%99re%20as%20much%20of%20a%20slow%20eater%20as%20I%20am.%3C/p%3E%3Cp%3E(Side%20note:%20I%20also%20like%20talking.%20Sometimes%20I%20am%20still%20on%20my%20first%20bite%20when%20other%20people%20are%20halfway%20through%20their%20meal,%20and%20I%20am%20only%20on%20my%20second%20or%20third%20bite%20when%20others%20have%20finished,%20but%20that%E2%80%99s%20only%20because%20I%20like%20talking%20AND%20I%E2%80%99m%20one%20of%20the%20slowest%20eaters%20there%20is.)%3C/p%3E%3Cp%3EPerhaps%20serving%20it%20in%20a%20hot%20ceramic%20bowl%20has%20contributed%20to%20the%20fact%20that%20basically%20every%20time%20I%E2%80%99ve%20had%20doenjang%20jjigae%20in%20my%20life%20(mostly%20in%20Seoul;%20increasingly%20at%20home%E2%80%A6),%20I%E2%80%99ve%20felt%20enticed%E2%80%94no,%20compelled%E2%80%94to%20slurp%20up%20every%20last%20sip%20of%20the%20stuff,%20tipping%20the%20hot%20ttukbaegi%20so%20that%20the%20last%20few%20bites%20pool%20to%20one%20side,%20making%20things%20a%20little%20easier%20for%20me%20and%20my%20spoon.%3C/p%3E%3Cp%3EAt%20first%20glance,%20it%20might%20seem%20like%20the%20most%20blah,%20basic,%20homely%20soup,%20especially%20compared%20to%20some%20of%20the%20flashier,%20spicier%20fare%20that%20Korean%20cuisine%20has%20to%20offer.%20I,%20too,%20once%20held%20the%20mistaken%20opinion%20that%20doenjang%20jjigae%20was%20not%20very%20exciting,%20but%20then%20one%20of%20my%20Korean%20friends%20took%20me%20to%20a%20restaurant%20that%20specialized%20in%20doenjang%20jjigae,%20and%20that%20restaurant%E2%80%99s%20very%20existence,%20not%20to%20mention%20its%20delicious%20food,%20made%20me%20consider%20the%20humble%20jjigae%20in%20a%20whole%20new%20light.%3C/p%3E%3Cp%3EI%20mean%20macaroni%20and%20cheese%20is%20pretty%20basic%20and%20homely%20when%20you%20get%20down%20to%20it,%20but%20some%20of%20us%20can%20still%20get%20more%20than%20a%20little%20excited%20about%20that.%3C/p%3E%3Cp%3ENot%20that%20I%E2%80%99m%20comparing%20doenjang%20jjigae%20to%20macaroni%20and%20cheese%20exactly%20(although%20they%E2%80%99re%20both%20bursting%20with%20umami!)%E2%80%A6%20but%20give%20it%20a%20chance,%20and%20I%20bet%20it%20will%20win%20you%20over.%20I%20mean,%20unless%20you%20hate%20miso%20soup.%20Though%20believe%20me,%20you%20CAN%20hate%20Japanese%20natto%20and%20still%20love%20doenjang%20jjigae;%20I%20should%20know,%20because%20I%20have%20a%20tabezugirai%20relationship%20with%20natto,%20and%20I%E2%80%99m%20not%20ashamed%20to%20admit%20it.%3C/p%3E%3Cp%3EConsider%20this:%20Paula%20is%20consistently%20unimpressed%20by%20tofu%20and%20strictly%20ambivalent%20about%20zucchini,%20but%20she%20enjoys%20both%20(BOTH!)%20in%20doenjang%20jjigae,%20because%20they%20soak%20up%20so%20much%20flavor%20from%20the%20broth.%20It%20also%20has%20shrimp%20in%20it;%20and%20that%20right%20there%20is%20often%20enough%20to%20win%20me%20over.%3C/p%3E%3Cp%3EAlso:%20while%20it%20might%20not%20be%20traditional,%20stews%20are%20always%20good%20places%20to%20incorporate%20(=%20use%20up)%20certain%20random%20leftover%20foods%20that%20might%20be%20sitting%20around%20in%20your%20fridge.%20I%20wouldn%E2%80%99t%20advocate%20tossing%20absolutely%20anything%20in,%20but%20other%20vegetables%20that%20cook%20quickly,%20but%20then%20stand%20up%20well%20to%20further%20cooking,%20might%20be%20nice%E2%80%94potatoes,%20spinach,%20or%20kale%20for%20instance.%20We%E2%80%99ve%20also%20added%20some%20minimally%20seasoned%20and%20already%20cooked%20whitefish%20(leftover%20from%20this)%20to%20doenjang%20jjigae,%20which%E2%80%94to%20be%20perfectly%20honest%E2%80%94Paula%20then%20enjoyed%20even%20more%20than%20the%20tofu.%3C/p%3E%3Cp%3EI%E2%80%99m%20sure%20there%20are%20many%20ways%20to%20make%20this%20stew,%20but%20this%20is%20just%20the%20way%20I%E2%80%99ve%20been%20making%20it%20lately.%20Following%20the%20success%20I%20had%20using%20Japanese%20dashi-no-moto%20packets%20to%20make%20rabokki,%20I%E2%80%99ve%20also%20been%20using%20the%20instant-dashi%20tea%20bags%20to%20steep%20a%20weak%20dashi%20base%20for%20the%20doenjang%20jjigae%20broth.%20As%20I%20mentioned%20in%20the%20rabokki%20post,%20the%20dashi%20packets%20may%20have%20MSG,%20so%20if%20you%E2%80%99re%20worried%20about%20that,%20just%20make%20sure%20to%20read%20the%20ingredient%20list%20on%20the%20packaging;%20you%20could%20also%20make%20your%20own%20broth%20from%20anchovies,%20kombu%20(kelp),%2
