,%20those%20are%20always%20the%20foods%20that%20are%20favorites.%20I'm%20not%20sure%20if%20these%20foods%20just%20bring%20back%20good%20memories%20for%20people,%20or%20if%20the%20recipes%20are%20just%20classics%20that%20have%20been%20perfected%20over%20the%20generations,%20but%20I%20know%20better%20than%20to%20question%20a%20good%20thing.%3C/p%3E%3Cp%3EOne%20of%20my%20absolute%20favorite%20treats%20as%20a%20kid%20was%20straight%20out%20of%20my%20elementary%20school%20cookbook:%20chocolate%20caramel%20brownies.%20My%20mom%20would%20make%20these,%20and%20I%20would%20just%20melt.%20These%20brownies%20are%20just%20ridiculously%20rich%20and%20intense,%20with%20sweetness%20of%20chocolate%20mixing%20in%20with%20the%20salty%20stickiness%20of%20the%20caramel.%20Very%20yummy%20indeed!%20They%20are%20great%20because%20they%20are%20a%20hit%20with%20kids,%20but%20because%20they%20are%20so%20decadent,%20they%20also%20pass%20as%20a%20very%20%22adult%22%20dessert%20as%20well.%20What%20is%20also%20great%20about%20this%20recipe%20is%20that%20it%20took%20German%20chocolate%20cake%20mix%20and%20jazzed%20it%20up,%20so%20if%20you%20don't%20normally%20keep%20baking%20ingredients%20in%20your%20home%20but%20you%20want%20to%20bake%20something%20special,%20a%20box%20of%20cake%20mix%20will%20do%20the%20trick.%3C/p%3E%3Cp%3ELet%20me%20tell%20you%20though,%20the%20recipe%20violates%20just%20about%20every%20rule%20of%20vegan%20baking%20that%20there%20is.%20First,%20cake%20mix%20-%20not%20only%20do%20you%20find%20dairy%20and%20egg%20products,%20but%20healthywise,%20these%20are%20the%20worst%20offenders%20of%20partially%20hydrogenated%20yuck%20you%20can%20buy.%20Second,%20evaporated%20milk%20is%20critical%20in%20this%20recipe.%20And%20finally,%20the%20caramels.%20Besides%20having%20milk%20in%20them,%20they%20are%20just%20annoying%20to%20handle,%20even%20if%20they%20are%20delicious%20in%20the%20final%20product.%20The%20original%20recipe%20calls%20you%20to%20buy%20a%20bag%20of%20caramels%20and%20individually%20unwrap%20each%20of%20the%2050%20caramels.%20Let%20me%20tell%20you,%20I'm%20usually%20fairly%20bitter%20by%20the%20time%20I'm%20done%20with%20that%20process,%20and%20I'd%20rather%20just%20eat%20the%2050%20caramels%20than%20keep%20baking.%3C/p%3E%3Cp%3EFortunately,%20all%20of%20these%20fixes%20are%20pretty%20easy!%20I've%20previously%20extolled%20the%20virtues%20of%20Cherrybrook%20Kitchens%20(http://www.cherrybrookkitchens.com)%20vegan%20cake%20mixes,%20and%20it%20is%20just%20as%20delicious%20here,%20too.%20Just%20pick%20up%20a%20box%20of%20chocolate%20cake%20mix,%20and%20you're%20all%20set.%20Evaporated%20milk?%20No%20problem.%20Just%20take%20the%20amount%20of%20milk%20you%20need%20and%20double%20it,%20swapping%20in%20soy%20milk.%20Then,%20heat%20up%20the%20milk%20over%20medium%20low%20heat;%20the%20soy%20milk%20will%20get%20hot,%20but%20don't%20let%20it%20boil.%20Just%20stir%20occasionally,%20and%20the%20milk%20will%20reduce.%20Once%20reduced%20by%20half,%20you%20have%20evaporated%20milk.%3C/p%3E%3Cp%3EAnd%20the%20caramel?%20That%20ended%20up%20being%20the%20best%20surprise%20of%20all.%20Not%20only%20is%20this%20stuff%20delicious%20in%20this%20recipe,%20but%20it's%20actually%20meant%20to%20be%20a%20topping%20for%20ice%20cream.%20The%20batch%20whips%20up%20really%20quickly,%20and%20the%20final%20product%20has%20an%20intense,%20almost%20nutty%20flavor.%20Two%20thumbs%20way%20up,%20and%20a%20special%20thank%20you%20to%20http://veganicecream.blogspot.com%20for%20posting%20the%20recipe!%20I've%20put%20it%20below.%3C/p%3E%3Cp%3EChocolate%20Caramel%20Brownies%3C/p%3E%3Cp%3EYields:%2020-24%20brownies%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E1)%20Prepare%20evaporated%20milk.%20Heat%20soy%20milk%20over%20medium%20low%20heat,%20occasionally%20stirring%20to%20keep%20from%20boiling.%20After%20approximately%2010-15%20minutes,%20the%20milk%20should%20have%20reduced%20by%20half%20(1/3%20c.).%20Remove%20from%20heat.%3C/p%3E%3Cp%3E2)%20At%20the%20same%20time,%20prepare%20caramel%20sauce%20(recipe%20at%20the%20end).%3C/p%3E%3Cp%3E3)%20Mix%20together%20(by%20hand)%20the%20evaporated%20soy%20milk,%20the%20cake%20mix,%20and%20the%20melted%20butter%20substitute.%20The%20mixture%20will%20look%20like%20brownies.%3C/p%3E%3Cp%3E4)%20Pat%202/3%20of%20the%20dough%20into%20a%20greased%209%20x%2013%20inch%20pan.%20Bake%20the%20mixture%20for%208%20minutes%20in%20a%20preheated%20350%20degree%20oven.%3C/p%3E%3Cp%3E5)%20Remove%20from%20oven%20and%20sprinkle%20chocolate%20chips%20on%20top.%20Add%20the%20caramel%20sauce;%20you%20will%20not%20need%20all%20of%20it,%20just%20add%20until%20the%20caramel%20covers%20the%20top.%20(Put%20the%20rest%20in%20the%20fridge%20for%20ice%20cream!)%3C/p%3E%3Cp%3E6)%20Take%20the%20remaining%20dough%20and%20crumble%20over%20the%20top%20of%20the%20caramel,%20pushing%20the%20dough%20into%20the%20caramel%20if%20need%20be.%3C/p%3E%3Cp%3E7)%20Bake%20for%2015-20%20minutes.%20Cool%20completely%20before%20cutting.%20If%20you%20are%20having%20troubl
