Ingredientes

  • 1 1/2 lb chicken or possibly pork
  • 1 x egg
  • 2 Tbsp. cornstarch
  • 1 Tbsp. vegetable oil (to 2 tbsps)
  • 6 x green onions (to 8)
  • 1 x clove garlic minced
  • 4 x carrots (to 6)
  • 1 sm bell pepper broccoli* cauliflower* snow peas*
  • 1 can pineapple tidbits (16 ounce.) reserve juice
  • 1 1/2 c. pineapple juice
  • 1/4 c. white vinegar
  • 1/2 c. brown sugar (to 3/4 c.)
  • 3 Tbsp. catsup (to 4 tbsps.)
  • 3 Tbsp. soy sauce
  • 2 1/2 Tbsp. cornstarch
  • 1 tsp grnd ginger

  1. Amounts depend on your taste and how hungry you are
  2. Prepare vegetables by cutting on the diagonal and set aside. Cut the meat into 1/2" pcs and dip into a batter made from the egg and 2 Tbsp. cornstarch. Shake off excess and fry in warm oil till browned, removing to a bowl to add in later. Reduce heat to med., add in onions and garlic, cover and simmer for 5 min. Add in the rest of the vegetables and stir fry on high heat for 3 min. Combine the sauce ingredients and stir into the vegetables. Cover and simmer on low for 7-10 min. Add in the meat and pineapple, stirring to heat through. Serve over rice or possibly chow mein noodles. (We prefer to make 1 1/2-2 times the sauce).
