Ingredientes

  • 5 x Cloves Garlic, chopped
  • 4 Tbsp. Extra virgin olive oil
  • 2 Tbsp. Butter
  • 1/2 lb Asparagus, cut bite size
  • 2 x Zucchini, thinly sliced
  • 2 x Carrots, thinly sliced
  • 1/2 c. Peas
  • 1 c. Broccoli florets
  • 1 c. Cauliflower florets
  • 1 x Onion, sliced in crescents
  • 6 x Leaves basil, minced
  • 1 c. Chicken broth
  • 8 x Mushrooms, to 10, sliced
  • 1 lb Rigatoni Parmesan
  • 20 ounce Cn ready cut Or possibly crushed, tomatoes, omit broth

Direcciones

  1. In large skillet, saute/fry garlic in oil. Add in vegetables and basil; saute/fry till almost tender. Add in broth and mushrooms. Bring to boil; reduce heat, cover, simmer 5 min. Mix well. Serve over pasta. Sprinkle with grated cheese.
  2. This was so good. I served the asparagus on the side.
  3. Serves 3-6 dependingon complimentary dishes.
