.%3C/p%3E%3Cp%3EI%20am%20reluctantly%20thankful%20for%20cake%20pops.%3C/p%3E%3Cp%3EValentines%20Day%20is%20not%20a%20huge%20marker%20in%20my%20book.%20%20For%20the%20majority%20of%20those%2010+%20years%20Ruark%20and%20I%20went%20in%20and%20out%20with%20celebrating%20depending,%20honestly,%20if%20we%20felt%20like%20it%20or%20not.%20%20We%20had%20started%20dating%20when%20we%20were%20so%20young,%20and%20found%20plenty%20of%20moments%20to%20show%20each%20other%20how%20we%20felt.%20%20And%20in%20general%20I%E2%80%99m%20not%20a%20big%20fan%20of%20commercially-fueled%20tokens.%20%20Two%20years%20ago%20the%20man%20I%20was%20with%20was%20away%20for%20work%20and%20had%20his%20friend%20stop%20by%20with%20a%20huge%20bouquet%20at%20the%20theatre%20I%20was%20working%20at.%20%20Last%20year%20new%20boyfriend%20and%20I%20had%20no%20plans%20until%20mid-morning,%20when%20he%20called%20where%20I%20was%20out%20of%20town%20working%20and%20sweetly%20said,%20%E2%80%9CI%E2%80%99m%20thinking%20it%E2%80%99s%20Valentines%20Day%20and%20you%E2%80%99re%20my%20Valentine,%20so%20we%20should%20be%20together%20tonight%E2%80%9D.%20%20%20I%20trained%20it%20back%20to%20NYC.%3C/p%3E%3Cp%3ESo%20this%20year,%20being%20single,%20I%E2%80%99ve%20been%20more%20contemplative%20about%20the%20love%20in%20my%20life%20in%20general.%20%20Not%20at%20all%20mournful,%20just%20reflective.%20%20I%20have%20so%20much%20love,%20so%20many%20people%20I%E2%80%99m%20surrounded%20by%20who%20have%20full,%20generous%20hearts,%20that%20I%20feel%20more%20in%20love%20than%20ever.%3C/p%3E%3Cp%3EOh,%20the%203rd%20point%20up%20there?%20%20A%20few%20months%20ago%20I%20had%20to%20develop%20a%20gluten-free%20recipe%20for%20Valentine%20Cake%20Pops%20for%20Easy%20Eats.%20%20Two%20weeks%20ago%20I%20made%2075%20chocolate%20chip%20and%20lemon%20zest%20cake%20pops%20in%20the%20shape%20of%20Winnie%20the%20Pooh%20honey%20pots%20for%20a%20baby%20shower.%20%20They%20were%20cute,%20but%20not%20as%20adorable%20as%20I%E2%80%99d%20wanted%20them%20to%20be%20for%20the%20mom-to-be.%20%20And%20they%20took%20me%20eight%20hours!%20Lastly,%20for%20the%20first%20Milk%20Bar%20Mondays%20swap%20last%20week%20I%20made%20Carrot%20Cake%20Truffles,%20which%20are%20essentially%20cake%20balls%20(and%20one%20of%20my%20favorite%20super-sweet%20recipes).%3C/p%3E%3Cp%3EIn%20the%20beginning%20of%20this%20road%20with%20cake%20pops,%20I%20was%20often%20cursing,%20whining,%20or%20whinging.%20%20But%20the%20result%20of%20all%20the%20frustration?%3C/p%3E%3Cp%3EMoments%20of%20joy%20this%20morning%20as%20I%20deftly%20baked,%20blended,%20dipped,%20flipped%20and%20formed%20these%20truffles.%20%20I%20had%20some%20cake%20I%E2%80%99d%20been%20experimenting%20with%20(a%20new%20flour%20blend),%20some%20leftover%20liquid%20cheesecake,%20some%20bags%20of%20chocolate%20and%20lots%20of%20fun%20things%20to%20toss%20truffles%20in.%20%20I%20found%20myself%20smiling%20in%20the%20silence%20of%20my%20kitchen,%20thinking%20about%20those%20I%E2%80%99d%20be%20wrapping%20and%20gifting%20these%20for.%20%20They%20look%20so%20cute%20all%20ribboned%20up.%20%20And,%20they%20were%20actually%20pretty%20easy.%20%20I%20enjoyed%20making%20them.%3C/p%3E%3Cp%3EWhile%20made%20of%20cake,%20these%20truffles%20taste%20a%20bit%20more%20ganache-y%20because%20of%20how%20dark,%20rich%20and%20buttery%20they%20are.%20%20%20I%20tossed%20them%20in%20ground%20walnuts,%20dark%20cocoa%20powder,%20raw%20cacao%20nibs,%20and%20some%20candy%20hearts%20I%20had%20leftover%20from%20the%20Easy%20Eats%20recipe.%20%20It%20was%20a%20very%20romantic%20morning%20in%20my%20kitchen.%20%20I%20was%20in%20love%20with%20the%20natural%20light%20pouring%20through%20my%20windows%20and%20my%20ancient%20camera%20that%20was%20snapping%20away.%3C/p%3E%3Cp%3EI%20hope%20you%20have%20a%20lovely%20Valentines%20Day,%20Bloggerreaders.%20%20But%20more%20than%20that,%20I%20wish%20you%20much%20peace,%20love%20and%20sweet,%20sweet%20life%E2%80%A6%20always.%3C/p%3E%3Cp%3E-%20Jacqueline%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%C2%B0%3C/p%3E%3Cp%3EGrease%20an%208%C3%978%E2%80%B3%20cake%20pan%20(I%20prefer%20glass)%3C/p%3E%3Cp%3EIn%20a%20small%20pot%20on%20medium%20heat,%20melt%20butter.%20%20Whisk%20in%20cocoa%20until%20smooth.%20%20Turn%20off%20heat%20and%20allow%20to%20cool%20slightly%20while%20you%20continue.%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20a%20standing%20mixer%20with%20the%20whisk%20attachment%20or%20with%20a%20hand%20mixer,%20beat%20eggs%20on%20high%20until%20creamy,%20about%2045%20seconds.%20%20Add%20the%20sugars%20and%20beat%20until%20thoroughly%20incorporated%20with%20no%20traces%20of%20sugar,%202-3%20minutes.%3C/p%3E%3Cp%3EWith%20the%20mixer%20on%20low,%20slowly%20stream%20in%20butter/chocolate%20mixture.%20%20Beat%20until%20incorporated.%3C/p%3E%3Cp%3ESlowly%20add%20flour%20and%20salt.%20%20Mix%20on%20low%20until%20incorporated.%20%20Stir%20in%20walnuts.%3C/p%3E%3Cp%3EPour%20into%20pan%20and%20bake%20for%2025%20minutes%20or%20until%20a%20toothpick%20inserted%20in%20the%20center%20comes%20out%20relatively%20clean.%3C/p%3E%3Cp%3EImmediately%20turn%20out%20onto%20a%20baking%20sheet%20and%20break%20up%20into%20pieces.%20%20Allow%20to%20cool%20completely.%3C/p%3E%3Cp%3EWhen%20cool,%20return%20to%20standing%20mixer%20with%20the%20paddle%20attachment.%20%20Paddle%20on%20medium/low%20until%20completely%20broken%20up.%20%20Add%20liquid%20cheesecake%20or%20frosting%201%20Tbsp%20at%20a%20time,%20until%20the%20cake%20comes%20together%20and%20you%20can%20easily%20roll%20a%20piece%20into%20a%20firm%20ball%20without%20it%20falling%20apart.%3C/p%3E%3Cp%3ERoll%20batter%20in%20quarter-sized%20balls,%20placing%20on%20cookie%20sheets%20lined%20with%20wax%20paper.%20%20My%20batch%20made%2030.%3C/p%3E%3Cp%3EPlace%20all%20toppings%20in%20bowls%20(shallower%20and%20wider%20the%20better).%20%20Melt%20chocolate%20in%20the%20microwave,%20first%20for%201%20minute,%20then%20stirring%20to%20melt%20completely,%20then%20for%20another%2030%20seconds%20if%20the%20chocolate%20isn%E2%80%99t%20smooth%20enough%20(it%20should%20be%20fluid%20but%20only%20warm%20to%20the%20touch).%3C/p%3E%3Cp%3EQuickly%20use%20your%20fingers%20to%20lightly%20coat%20each%20ball%20in%20chocolate,%20then%20toss%20into%20topping%20bowls,%20up%20to%20three%20in%20each%20bowl.%20%20Shake%20/%20lightly%20toss%20the%20truffles%20to%20coat%20completely,%20then%20return%20to%20wax%20paper-lined%20trays.%20%20Repeat%20with%20remaining%20truffles%20until%20done.%3C/p%3E%3Cp%3ERefrigerate%20at%20least%2010%20minutes%20before%20packaging.%3C/p%3E%3Cp%3EShare%20with%20those%20you%20love.%20%20Or%20freeze%20them%20and%20slowly%20eat%20them%20by%20yourself,%20one%20by%20one%E2%80%A6%3C/p%3E%3Cp%3EI%20heart%20you%20Bloggerreaders%3C/p%3E){kind=link}
