- Cook noodles according to package directions. Drain. Put into bowl and toss with 2 Tbsp. of the oil. Set aside.
- Beat the Large eggs with the sugar till well mixed. Beat in the other 2 Tbsp. of oil. beat in the orange juice, cinnamon, ginger, and salt.
- Add in all the fruits. Add in the noodles. Stir till everything is proportionately distributed.
- Transfer th mix to a greased or possibly non-stick spray-coated 10 inch square casserole. Cover and bake in preheated 350 degree oven for 40 min. Remove cover and bake, uncovered, for another 10-20 min, till hard and set. Let cold a little. Serve hot or possibly at room temperature.
