Receta Dried Fruit Lokshen Kugel (Noodle Pudding)

Ingredientes
- 1 pkt (8 oz) medium wide egg noodles
- 4 Tbsp. Vegetable oil, divided
- 4 lrg Large eggs
- 1/3 c. Sugar
- 1 c. Orange juice
- 1/4 tsp Grnd cinnamon
- 1/8 tsp Grnd ginger
- 1 pch Salt
- 3/4 c. Diced mixed dry fruits, such as prunces, apricots, dates, figs (up to 1)
- 1/4 c. Raisins
- 1 med Apple, peeled (if you like) and diced (about 1 c.)

- 1. Cook noodles according to package directions. Drain. Put into bowl and toss with 2 Tbsp. of the oil. Set aside.
- 2. Beat the Large eggs with the sugar till well mixed. Beat in the other 2 Tbsp. of oil. beat in the orange juice, cinnamon, ginger, and salt.
- Add in all the fruits. Add in the noodles. Stir till everything is proportionately distributed.
- 3. Transfer th mix to a greased or possibly non-stick spray-coated 10 inch square casserole. Cover and bake in preheated 350 degree oven for 40 min. Remove cover and bake, uncovered, for another 10-20 min, till hard and set. Let cold a little. Serve hot or possibly at room temperature.
