%20Stack%20'em%20up%3C/p%3E%3Cp%3ESome%20days%20I%20just%20can%E2%80%99t%20remember%20where%20I%20put%20that%20%E2%80%9CSuper%20Woman%E2%80%9D%20cape%E2%80%A6%3C/p%3E%3Cp%3EIt%20seems%20like%20the%20more%20we%20women%20progress%20forward%20into%20equality%20(there%E2%80%99s%20a%20joke%20for%20you)%20the%20more%20we%20are%20expected%20to%20do%20to%20earn%20it.%20I%20am%20one%20of%20the%20lucky%20women%20I%20know,%20who%20has%20a%20partner%20that%20truly%20thinks%20of%20me%20as%20an%20equal%20in%20our%20relationship.%20That%20fact%20notwithstanding,%20some%20days%20it%20just%20doesn%E2%80%99t%20pay%20to%20get%20out%20of%20bed%E2%80%A6with%20all%20that%20is%20oftentimes%20on%20my%20plate,%20I%20am%20out%20of%20energy%20before%20I%20take%20my%20shower.%20If%20it%20sounds%20like%20I%20am%20complaining,%20I%E2%80%99m%20not.%20Really.%20I%20KNOW%20how%20good%20I%20have%20it.%20It%E2%80%99s%20just%20that%20I%20think%20we%20women%20worry%20more%20than%20men,%20and%20about%20different%20things.%3C/p%3E%3Cp%3EBecause%20I%20(and%20probably%20a%20lot%20of%20you%20reading%20this)%20have%20a%2012%20hour%20life%20that%20takes%20place%20outside%20of%20my%20home,%20it%20is%20essential%20that%20planning%20and%20forethought%20go%20into%20not%20only%20my%20budget,%20but%20my%20weekly%20dinner%20menu%20as%20well.%20I%20don't%20have%20the%20luxury%20of%20%22wiggle%20room%22%20in%20either.%3C/p%3E%3Cp%3EMothers-%20especially%20those%20whose%20daily%20duties%20take%20them%20away%20from%20the%20family-%20want%20and%20need%20the%20assurance%20that%20their%20children/spouses/significant%20others%20%20are%20not%20suffering%20just%20because%20we%20are%20forced%20to%20work%20a%2040+%20hour%20work%20week%20outside%20of%20the%20home.%3C/p%3E%3Cp%3EThis%20being%20said-%20that%E2%80%99s%20a%20toughie.%20(WHERE%20is%20that%20cape??)%3C/p%3E%3Cp%3EThe%20two%20biggest%20challenges%20surrounding%20dinner%20time%20are%20always%20nutrition%20and%20time%20spent%20cooking%20vs.%20time%20spent%20reconnecting%20with%20the%20family.%20I%20refuse%20to%20forgo%20quality%20nutrition.%20It%20is%20just%20as%20important%20as%20time%20spent%20together.%20Menu%20choices%20aren%E2%80%99t%20always%20easy,%20my%20days%20are%20full%20and%20my%20evenings%20at%20home%20during%20the%20work%20week%20seem%20to%20be%20about%202%20hours%20long.%20It%E2%80%99s%20equally%20imperative%20in%20these%20times%20of%20economic%20stress%20to%20be%20smart%20with%20your%20cookies%20and%20continue%20to%20think%20outside%20of%20the%20to-go%20box.%3C/p%3E%3Cp%3EPanini%20sandwiches%20are%20a%20terrific%20drive%20through%20alternative%20meal-%20you%20are%20only%20limited%20by%20the%20scope%20of%20your%20own%20imagination.%20They%E2%80%99re%20easy%20to%20prepare-%20you%20can%20use%20a%20Panini%20griller,%20a%20griddle,%20a%20cast%20iron%20skillet%E2%80%A6even%20put%20your%20sandwich%20grill%20pan%20on%20your%20outdoor%20grill!%3C/p%3E%3Cp%3EStuff%20them%20full%20of%20Panini%20goodness-%20that%20runs%20the%20gamut%20from%20chocolate%20and%20banana%20Paninis%20for%20the%20kids%20(ok,%20not%20just%20for%20the%20kids),%20vegetarian,%20fruit%20and%20cheese,%20and%20meats.%20Ciabatta%20bread,%20foccacia,%20even%20challah%20bread%20can%20be%20used.%20I%20love%20the%20challah%20bread,%20personally.%20It%E2%80%99s%20one%20of%20my%20favorites.%20Serve%20with%20a%20fresh%20fruit%20plate%20and%20a%20side%20salad-%20dinner%20in%20less%20than%2030%20minutes;%20that%20equals%20more%20time%20to%20spend%20with%20my%20favorite%20Fab%20Family.%20We%20sampled%20the%20turkey,%20brie,%20pear%20and%20peach%20mayo%20paninis,%20served%20them%20up%20with%20sweet%20potato%20fries%20and%20fresh%20fruit%20and%20yogurt!%3C/p%3E%3Cp%3EAny%20way%20you%20prepare%20them,%20these%20grilled%20sandwiches%20don%E2%80%99t%20just%20%E2%80%9Cstack%E2%80%9D%20up%20against%20a%20fast-food%20meal-%20they%20completely%20overshadow%20it.%3C/p%3E%3Cp%3EBain%20sult%20as!%20(Enjoy!)%3C/p%3E%3Cp%3ETurkey,%20Pear,%20and%20Brie%20Panini%20on%20Pumpernickel%20with%20Peach%20Mayo%3C/p%3E%3Cp%3E(say%20THAT%20one%2010%20times%20fast)%3C/p%3E%3Cp%3EAssemble%20your%20paninis,%20buttering%20bottom%20slice%20of%20bread.%20Mayo,%20turkey,%20pears,%20onion,%20brie,%20mayo,%20bread.%20Cook%20for%20a%20few%20minutes,%20butter%20top%20slice,%20flip,%20cook%20for%20a%20few%20more%20minutes.%3C/p%3E%3Cp%3EReady%20in%20under%2015%20minutes,%20not%20counting%20slicing%20time.%3C/p%3E%3Cp%3E*As%20always,%20tweak%20away%20and%20make%20it%20your%20own.%20I%20think%20I%20will%20try%20it%20next%20time%20with%20a%20different%20bread.%20The%20pumpernickel%20was%20very%20good,%20but%20I%20think%20a%20ciabatta%20would%20be%20fantastic.*%3C/p%3E%3Cp%3ETracy%20Wilson%20on%20Facebook%3C/p%3E%3Cp%3EJ.C.%20Wilson%20on%20Facebook%20(Tracy's%20photographer,%20food%20critic,%20and%20husband%20extraordinaire)%3C/p%3E%3Cp%3ERead%20a%20review%20of%20The%20Dinner%20Belle%20Blog%20on%20whatscook.in%3C/p%3E){kind=link}
