Ingredientes

  • 1 lb Duck livers, cleaned
  • 1 Tbsp. Kosher salt
  • 2 x To 3 large shallots, minced
  • 1 ounce Brandy
  • 1 Tbsp. Fresh pepper
  • 1 ounce Hazelnut liqueur
  • 1 Tbsp. Nutmeg
  • 3 c. Heavy cream

Direcciones

  1. Put liver, shallots, pepper, nutmeg, salt, brandy and liqueur in food processor and puree. With machine on add in 3 c. heavy cream. Strain through a fine sieve. Bake in water bath at 325 to 350 till the center is hard to the touch.
  2. Serve as an appetizer or possibly fist course with toasted French Bread slices.
