Receta Duck Liver Mousse

Ingredientes
- 1 lb Duck livers, cleaned
- 1 Tbsp. Kosher salt
- 2 x To 3 large shallots, minced
- 1 ounce Brandy
- 1 Tbsp. Fresh pepper
- 1 ounce Hazelnut liqueur
- 1 Tbsp. Nutmeg
- 3 c. Heavy cream
Direcciones
- Put liver, shallots, pepper, nutmeg, salt, brandy and liqueur in food processor and puree. With machine on add in 3 c. heavy cream. Strain through a fine sieve. Bake in water bath at 325 to 350 till the center is hard to the touch.
- Serve as an appetizer or possibly fist course with toasted French Bread slices.
