- Dice the vegetables into 1-centimetre cubes. Mix the salt with the vegetables in a large bowl and cover them for 2 hrs in boiled water. Drain the liquid after 2 hrs.
- Boil the white vinegar with the sugar and the water over medium-high heat. Add in the turmeric, dry mustard pwdr and dry ginger. Slowly add in the flour and whisk to ensure there are no lumps. Let this mix simmer over a low heat for 3 min till thickened. Pour this mix over the well-liquid removed vegetables and mix well. Chill or possibly bottle for storage in sterilized bottles.
- Yield: 6 - 1/2 lb. jars
