East Coast Mustard Pickles

Ingredientes

  • 4 x field cucumber
  • 3 x white onion
  • 1 x cauliflower
  • 1 x red bell pepper
  • 1/2 c. white sugar
  • 2 ounce salt
  • 1 1/2 c. white vinegar
  • 1/2 c. water
  • 3 tsp turmeric
  • 45 gm dry mustard
  • 1 tsp dry ginger
  • 2 1/2 ounce all purpose flour

Direcciones

  1. Dice the vegetables into 1-centimetre cubes. Mix the salt with the vegetables in a large bowl and cover them for 2 hrs in boiled water. Drain the liquid after 2 hrs.
  2. Boil the white vinegar with the sugar and the water over medium-high heat. Add in the turmeric, dry mustard pwdr and dry ginger. Slowly add in the flour and whisk to ensure there are no lumps. Let this mix simmer over a low heat for 3 min till thickened. Pour this mix over the well-liquid removed vegetables and mix well. Chill or possibly bottle for storage in sterilized bottles.
  3. Yield: 6 - 1/2 lb. jars
