%3C/p%3E%3Cp%3EDon's%20been%20complaining%20about%20the%20fact%20that%20we%20hardly%20have%20dessert%20anymore.%20Poor%20thing!%20See,%20for%20the%20last%20couple%20of%20months%20I've%20been%20in%20a%20phase%20where%20I%20don't%20really%20feel%20like%20eating%20anything%20heavy.%20Since%20most%20raw%20desserts%20are%20nut%20based%20I%20therefore%20have%20been%20staying%20away%20from%20those%20too.%20I've%20managed%20to%20find%20a%20compromise,%20however,%20in%20raw%20chocolate.%20Just%20the%20thing%20to%20satisfy%20a%20sweet%20tooth,%20yet%20not%20as%20dense%20as%20cake%20or%20other%20raw%20goodies.%20And%20so%20I've%20been%20slowly%20working%20my%20way%20through%20Matthew%20Kenney's%20new%20Raw%20Chocolate%20book.%20I%20tried%20a%20couple%20of%20fudge%20recipes%20that%20sadly%20didn't%20really%20turn%20out.%20While%20they%20tasted%20fabulous%20for%20some%20reason%20the%20consistency%20was%20closer%20to%20that%20of%20icing%20or%20spread.%20Duh!%20Ah%20well,%20can't%20win%20them%20all%20I%20suppose.%3C/p%3E%3Cp%3EI%20also%20made%20a%20batch%20of%20his%20Coconut%20Haystacks.%20When%20I%20was%20growing%20up%20it%20was%20a%20bit%20of%20a%20tradition%20in%20my%20family%20-%20and%20a%20rather%20strange%20one%20come%20to%20think%20of%20it%20-%20to%20crack%20open%20a%20mature%20coconut%20at%20Easter.%20It%20was%20the%20only%20time%20of%20year%20that%20we'd%20eat%20them.%20Anyhoo,%20no%20wonder%20that%20the%20choccie%20-%20coconut%20combo%20made%20me%20think%20how%20perfect%20a%20treat%20this%20would%20be%20with%20Easter%20just%20around%20the%20corner!%3C/p%3E%3Cp%3EAt%20first%20texture%20wasn't%20quite%20right%20either%20and%20the%20balls%20didn't%20hold%20their%20shape.%20The%20recipe%20calls%20for%20cacao%20oil%20which%20I%20assumed%20was%20the%20same%20as%20butter,%20but%20I%20guess%20it%20isn't%20after%20all.%20Thankfully,%20I%20was%20able%20to%20salvage%20it%20with%20some%20minimal%20tweaking.%20To%20my%20delight,%20the%20result%20is%20totally%20decadent%20and%20even%20slightly%20addictive.%20;-)%3C/p%3E%3Cp%3EMix%20shredded%20coconut,%20cacao%20powder,%20coconut%20sugar%20and%20cacao%20nibs%20in%20a%20large%20bowl.%3C/p%3E%3Cp%3EAdd%20liquid%20sweetener%20and%20melted%20cacao%20butter%20and%20coconut%20oil.%20Incorporate%20well.%3C/p%3E%3Cp%3EForm%20into%20balls%20with%20your%20hands%20or%20with%20a%20cookie%20scoop.%3C/p%3E%3Cp%3EChill%20before%20serving.%3C/p%3E%3Cp%3ECarmella's%20Note:%20Whenever%20using%20cacao%20butter%20or%20coconut%20oil%20in%20a%20recipe,%20pay%20close%20attention%20to%20whether%20the%20amounts%20are%20measured%20before%20or%20after%20these%20have%20been%20melted.%3C/p%3E%3Cp%3EOh,%20and%20for%20more%20yummy%20chocolatey%20ideas%20for%20Easter%20be%20sure%20to%20check%20out%20these%20previous%20posts:%3C/p%3E){kind=link}
