%3C/p%3E%3Cp%3EI%20got%20a%20few%20comments%20after%20that%20post%20about%20how%20reminiscent%20the%20method%20was%20of%20those%20used%20in%20Indian%20curries.%20In%20fact,%20I%20had%20come%20up%20with%20the%20recipe%20when%20paging%20through%20an%20Indian%20cookbook.%20Many%20north%20Indian%20curries%20start%20with%20a%20blended%20paste%20of%20garlic%20and%20ginger%20%E2%80%94%20often%20with%20water%20added%20for%20easier%20blending%20%E2%80%94%20so%20instead%20of%20using%20water%20in%20the%20paste,%20I%20used%20some%20of%20the%20coconut%20milk%20that%20I%20would%20later%20add%20to%20the%20curry%20anyway.%3C/p%3E%3Cp%3EEver%20since%20then,%20I%E2%80%99ve%20been%20wanting%20to%20post%20a%20recipe%20for%20an%20easy,%20under-an-hour%20Indian%20curry,%20using%20a%20similar%20method%E2%80%A6%3C/p%3E%3Cp%3E%E2%80%A6and%20it%E2%80%99s%20finally%20here!%20Of%20course%20I%20can%E2%80%99t%20blame%20myself%20too%20much%20for%20the%20delay%20%E2%80%94%20I%E2%80%99ve%20only%20just%20gotten%20back%20into%20the%20kitchen%20(and,%20you%20know,%20chopping%20things%20with%20knives)%20over%20the%20last%20month%20or%20so,%20after%20I%20spent%20the%20spring%20frantically%20finishing%20my%20dissertation,%20and%20the%20summer%20sitting%20around%20resting/heating/icing%20my%20wrists%20from%20the%20ensuing%20RSI.%3C/p%3E%3Cp%3ELuckily,%20this%20curry%20involves%20very%20little%20chopping:%20the%20onion%20gets%20blended%20up%20into%20a%20paste,%20along%20with%20the%20ginger%20and%20garlic,%20so%20really%20the%20only%20thing%20that%20needs%20to%20be%20cut%20up%20is%20the%20chicken%20(which%20I%E2%80%99ve%20told%20Paula%20is%20now%20her%20job).%3C/p%3E%3Cp%3EI%E2%80%99ve%20only%20made%20this%20with%20chicken,%20but%20the%20curry%20flavors%20and%20sauce%20are%20basic%20and%20versatile%20enough%20to%20go%20nicely%20with%20just%20about%20any%20starring%20ingredients.%20(We%20tried%20this%20curry%20sauce%20with%20our%20homemade%20paneer,%20and%20that%20was%20a%20treat!)%3C/p%3E%3Cp%3EThe%20curry%20sauce%20gets%20its%20body%20from%20crushed%20tomatoes,%20and%20its%20creaminess%20from%20coconut%20milk.%20The%20coconut%20milk%20makes%20the%20curry%20a%20lot%20lighter%20than%20if%20you%20were%20to%20add%20heavy%20cream%20(which%20is%20something%20I%20rarely%20stock%20in%20my%20kitchen),%20but%20I%20make%20up%20for%20that%20by%20using%20some%20butter%20or%20ghee%20in%20the%20curry,%20for%20a%20little%20hint%20of%20the%20richness%20you%E2%80%99d%20get%20in%20a%20butter%20chicken%20curry.%3C/p%3E%3Cp%3EAnd%20all%20of%20the%20flavor%20comes%20from%20cooking%20down%20the%20paste%20of%20aromatics,%20along%20with%20a%20blend%20of%20ground%20spices%20%E2%80%94%20the%20ones%20that%20are%20often%20in%20%E2%80%9Ccurry%20powder,%E2%80%9D%20plus%20a%20few%20extras,%20if%20you%20have%20them%20around.%3C/p%3E%3Cp%3ESince%20the%20aromatics%20have%20been%20blended%20with%20a%20little%20coconut%20milk,%20you%20don%E2%80%99t%20really%20need%20to%20add%20any%20butter,%20oil,%20or%20ghee%20to%20fry%20them%20in,%20so%20I%20left%20all%20that%20out%20the%20first%20time%20I%20ever%20made%20this.%20Paula%20and%20I%20both%20enjoyed%20our%20meal,%20but%20something%20still%20tasted%20like%20it%20was%20missing%E2%80%A6%3C/p%3E%3Cp%3EAs%20we%20confirmed%20the%20second%20time%20around,%20that%20something%20turned%20out%20to%20be%20about%202%20tablespoons%20of%20butter.%20(If%20only%20every%20recipe%20had%20such%20a%20simple%20fix!)%3C/p%3E%3Cp%3EThis%20has%20become%20one%20of%20our%20favorite%20go-to%20weeknight%20chicken-centered%20dinners.%20I%20won%E2%80%99t%20rehash%20all%20of%20my%20whining%20about%20the%20cost%20and%20mediocrity%20of%20most%20of%20the%20restaurants%20where%20we%20live,%20but%20I%E2%80%99ll%20just%20say%20this:%20it%E2%80%99s%20awfully%20nice%20to%20be%20able%20to%20make%20our%20own%20quick%20and%20easy%20Indian%20food%20at%20home.%3C/p%3E%3Cp%3ERECIPE:%3C/p%3E%3Cp%3EEasy%20Indian%20Chicken%20Curry%3C/p%3E%3Cp%3E(Serves%204)%3C/p%3E%3Cp%3EActive%20time:%2030%20min.;%20Total%20time:%2045%20minutes.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3ESpecial%20equipment%20needed:%3C/p%3E%3Cp%3E~%20blender%20(or%20food%20processor)%3C/p%3E%3Cp%3EHow%20to%20make%20it:%3C/p%3E%3Cp%3E0.%20Measure%20out%20and%20combine%20all%20ground%20spices%20(except%20the%20garam%20masala)%20into%20a%20small%20prep%20bowl%20and%20set%20aside.%20Chop%20up%20the%20chicken%20and%20set%20aside.%3C/p%3E%3Cp%3E1.%20Add%20the%20garlic,%20ginger,%20and%20onion%20to%20a%20blender,%20along%20with%20a%20few%20tablespoons%20of%20coconut%20milk%20to%20help%20them%20blend.%20Puree%20until%20smooth,%20adding%20more%20coconut%20milk%20if%20needed;%20you%20can%20discard%20any%20large%20chunks%20of%20ginger%20that%20remain.%3C/p%3E%3Cp%3E2.%20In%20a%20large%20pot%20or%20deep%20pan,%20heat%20the%20butter%20or%20ghee%20to%20melt%20it,%20then%20add%20the%20garlic/ginger/onion%20mixture%20from%20the%20blender%20and%20cook,%20stirring%20frequently,%20over%20medium-high%20heat%20for%20about%205%20minutes,%20or%20until%20much%20of%20the%20liquid%20has%20evaporated%20and%20the%20paste%20is%20fragrant.%20(Don%E2%80%99t%20wash%20the%20blender%20yet!)%3C/p%3E%3Cp%3E3.%20Add%20all%20of%20the%20ground%20spices%20(except%20the%20garam%20masala)%20to%20the%20pot,%20and%20stir%20well%20to%20cook%20them%20into%20the%20paste%20for%20about%202%20minutes.%20Then%20add%20the%20chicken,%20turn%20the%20heat%20up%20to%20high,%20and%20stir%20often%20to%20coat%20the%20pieces%20of%20chicken%20in%20the%20spices%20for%20about%205%20minutes,%20as%20you%20%E2%80%9Csear%E2%80%9D%20the%20chicken%20around%20the%20outside%20of%20each%20piece%20(although%20you%20won%E2%80%99t%20really%20be%20searing%20or%20browning%20the%20meat%20because%20of%20all%20the%20moisture%20from%20the%20coconut%20milk%20and%20onions,%20but%20you%E2%80%99ll%20at%20least%20be%20giving%20it%20a%20head%20start%20in%20cooking).%3C/p%3E%3Cp%3E4.%20Meanwhile,%20unless%20you%E2%80%99re%20using%20a%20can%20of%20very%20finely%20crushed%20tomatoes,%20pour%20the%20can%20of%20diced%20tomatoes%20into%20the%20blender%20and%20pulse%20until%20you%20get%20a%20thick%20smooth%20sauce,%20with%20no%20large%20chunks%20of%20diced%20tomatoes%20(or%20to%20your%20preferred%20consistency).%20After%20the%20chicken%20has%20been%20cooking%20for%20about%205%20minutes,%20add%20the%20tomato%20sauce%20to%20the%20pot,%20lower%20to%20medium%20heat,%20and%20simmer%20for%2010-15%20minutes,%20stirring%20occasionally.%3C/p%3E%3Cp%3E5.%20Once%20the%20chicken%20has%20cooked%20through,%20add%20the%20garam%20masala,%20give%20it%20a%20stir,%20then%20taste%20the%20curry%20sauce%20and%20adjust%20the%20seasoning%20as%20needed,%20adding%20more%20salt/chili%20powder/etc.%20if%20necessary.%20Then%20turn%20the%20heat%20down%20to%20low,%20and%20stir%20in%20the%20rest%20of%20the%20coconut%20milk%20(use%20the%20entire%20can%20for%20a%20creamier%20orange%20curry,%20or%20only%20about%20half%20a%20can%20total%20for%20a%20more%20tomato-y%20curry,%20with%20just%20a%20little%20richness).%20Cook%20for%20another%202-3%20minutes,%20then%20remove%20from%20the%20heat.%3C/p%3E%3Cp%3E6.%20Garnish%20with%20fresh%20lime%20juice%20and%20torn%20fresh%20cilantro,%20and%20serve%20warm%20with%20basmati%20rice%20and/or%20naan.%3C/p%3E%3Cp%3ERelated%20recipe%20posts:%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
