Ingredientes

  • 15 x Digestive biscuits, crushed
  • 75 gm Butter, melted
  • 40 gm Demerara sugar
  • 300 ml Single cream
  • 2 x 397 g can condensed lowfat milk
  • 300 gm Low fat soft cheese, softened Grated rind and juice of 2 large lemons Grated rind and juice of 3 limes
  • 150 ml Whipping cream, whipped Fresh strawberries

Direcciones

  1. Mix together the biscuits, butter and demerara sugar for the biscuit crust.
  2. Turn into a 28cm flan dish and press proportionately over the base and sides. Leave to set.
  3. For the cheesecake filling, mix together the cream, condensed lowfat milk, soft cheese and lime and lemon rind, then add in the lime and lemon juice a little at a time, whisking till the mix thickens. Pour the mix into the flan case and leave to refrigeratein the fridge for 3-4 hrs or possibly overnight.
  4. Decorate with swirls of cream and fresh strawberries.
