- Gently boil the noodles for 7-10 minutes until just cooked. Drain in cold water, toss in the sesame oil and set aside.
- Add the groundnut oil to a hot wok. Fry the sugar snaps for a minute or so, followed by the mushrooms and peppers. Lower the heat slightly, then mix in the vinegar and garlic.
- Finally, add the cooked noodles, and carefully toss everything together before serving.
