%20and%20Bakewell%20Cheesecake.%3C/p%3E%3Cp%3EFirst%20up%20though%20was%20this%20fabulous%20Eccles%20Cake.%20On%20the%20recipe%20by-line%20she%20states%20the%20following:%20%22Since%20creating%20this%20cake,%20I%20can't%20seem%20to%20stop%20making%20it.%20Christmas,%20Bake%20Sales,%20Birthdays%20.%20.%20.%20it%20goes%20down%20well%20on%20any%20occasion.%22%20And%20NO%20SMALL%20WONDER!!!%20This%20is%20an%20absolutely%20fantastic%20cake!%3C/p%3E%3Cp%3ENow,%20I%20am%20no%20stranger%20to%20Eccles%20Cakes.%20Eccles%20Cakes%20are%20lovely%20little%20fruity%20pastries,%20made%20with%20puff%20paste%20and%20a%20delicious%20raisin%20and%20currant%20filling.%20I've%20showed%20you%20them%20on%20here%20before.%20Wonderful%20things%20they%20are%20.%20.%20.%20admittedly%20it's%20been%20far,%20far%20too%20long!%20I%20first%20tasted%20Eccles%20Cakes%20out%20in%20Suffield,%20Alberta%20when%20we%20were%20living%20there.%20A%20little%20geordie%20girl%20named%20Sheena%20baked%20them%20one%20afternoon%20and%20brought%20them%20to%20the%20artclub%20I%20belonged%20to%20and%20it%20was%20instantaneous%20love.%20They%20were%20beautiful.%3C/p%3E%3Cp%3ESo%20is%20this%20cake,%20which%20takes%20that%20wonderful%20fruity%20and%20spicy%20Eccles%20Cakes%20filling%20and%20puts%20it%20smack%20dab%20in%20the%20middle%20of%20a%20buttery%20moist%20buttermilk%20apple%20cake!%20Wowsa%20Wowsa!!%3C/p%3E%3Cp%3EOh%20my%20.%20.%20.%20but%20I%20am%20in%20love%20here.%20The%20cake%20on%20it's%20own%20is%20beautiful%20.%20.%20.%20so%20moist%20and%20stogged%20with%20lovely%20little%20bits%20of%20apple.%20The%20filling%20is%20rich%20and%20fruity%20and%20spicy%20.%20.%20.%20the%20topping%20is%20sweet/tart%20with%20a%20bit%20of%20sugar%20crunch%20.%20.%20.%20the%20three%20together%20are%20very%20moreish%20indeed.%3C/p%3E%3Cp%3EIn%20short,%20this%20cake%20is%20a%20winner!%20Run%20.%20.%20.%20don't%20walk%20.%20.%20.%20to%20the%20shops%20and%20grab%20the%20ingredients%20today.%20You%20won't%20regret%20it%20.%20.%20.%20well,%20maybe%20your%20hips%20might%20regret%20it%20just%20a%20tad%20bit,%20but%20what%20the%20heck%20.%20.%20.%20life%20isn't%20worth%20living%20if%20you%20can't%20indulge%20yourself%20once%20in%20a%20while.%3C/p%3E%3Cp%3EThe%20Toddster%20is%20a%20very%20happy%20camper.%20He%20just%20adores%20this%20Eccles%20Cake.%20I%20think%20he's%20found%20a%20new%20favourite!%3C/p%3E%3Cp%3E*Eccles%20Cake*%3C/p%3E%3Cp%3EMakes%20one%209%20inch%20round,%20deep%20cake%3C/p%3E%3Cp%3EAll%20the%20flavours%20of%20a%20traditional%20Eccles%20Cake%20of%20the%20pastry%20variety,%20except%20in%20a%20cake!%20Scrummy!%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20160*C/325*F/%20gas%20mark%203.%20Take%20a%20deep%209%20inch%20round%20cake%20tin%20and%20butter%20it%20well.%20Line%20the%20botom%20and%20sides%20with%20parchment%20paper%20and%20butter%20the%20paper.%20Set%20aside.%3C/p%3E%3Cp%3EMake%20the%20filling%20by%20mixing%20together%20all%20of%20the%20filling%20ingredients.%20Set%20aside.%3C/p%3E%3Cp%3EPut%20the%20butter,%20sugar%20and%20vanilla%20into%20a%20large%20bowl.%20Beat%20with%20your%20electric%20whisk%20until%20light%20and%20fluffy.%20Beat%20in%20the%20eggs,%20one%20at%20a%20time,%20then%20fold%20in%20the%20flours,%20buttermilk%20and%20apples.%20Spoon%20half%20of%20the%20batter%20into%20the%20prepared%20pan.%20Scatter%20the%20filling%20over%20top,%20leaving%20a%201%20inch%20clear%20border%20all%20the%20way%20around.%20Spoon%20on%20the%20remaining%20batter.%20I%20did%20this%20by%20spooning%20batter%20into%20the%20free%20edge%20all%20the%20way%20around%20and%20then%20dolloping%20the%20rest%20over%20the%20top%20of%20the%20fruit%20filling,%20then%20spreading%20it%20all%20out%20evenly.%3C/p%3E%3Cp%3EBake%20for%201%20hour%20and%2025%20minutes,%20or%20until%20a%20skewer%20inserted%20in%20the%20centre%20comes%20out%20clean.%20Allow%20to%20cool%20completely%20in%20the%20tin.%20Once%20cooled%20remove.%3C/p%3E%3Cp%3EWhisk%20together%20the%20icing%20sugar%20with%20the%20lemon%20juice%20to%20make%20a%20drizzle%20icing.%20Drizzle%20over%20top%20of%20the%20cake%20and%20then%20scatter%20with%20the%20sugar%20cubes%20and%20lemon%20zest.%20Store%20in%20an%20airtight%20container.%3C/p%3E){kind=link}
