,%20then%20one%20pack%20of%20two,%206%20oz%20mahi%20mahi%20fillets%20will%20feed%20a%20family%20of%20four%20--%20so%20long%20as%20you%20supplement%20it%20with%20plenty%20of%20vegetables%20and%20perhaps%20a%20grain%20or%20starch.%3C/p%3E%3Cp%3EThe%20pics%20I've%20posted%20today%20are%20just%20a%20few%20of%20the%20delicious%20meals%20I've%20made%20with%20mahi%20mahi.%3C/p%3E%3Cp%3EIn%20the%20pic%20above,%20you'll%20note%20I%20lined%20my%20skillet%20with%20spinach%20and%20squash,%20laid%20a%20fillet%20of%20fish%20over%20the%20veggies%20and%20topped%20it%20with%20slices%20of%20lemon%20and%20then%20a%20lemon%20and%20green-olive%20tapenade%20which%20I%20purchased%20in%20bulk%20(I%20take%20in%20my%20own%20containers)%20from%20WFs%20olive%20bar.%3C/p%3E%3Cp%3EI%20poured%20about%20half%20a%20cup%20of%20white%20wine%20over%20the%20lot%20and%20turned%20the%20heat%20to%20low,%20placed%20the%20lid%20on%20the%20skillet%20and%20let%20the%20meal%20steam%20cook%20for%20about%2015%20mins.%3C/p%3E%3Cp%3ESimilarly,%20I%20made%20a%20skillet%20meal%20with%20organic%20broccoli,%20red%20and%20green%20bell%20peppers,%20spring%20onion%20and%20corn%20kernels%20(I%20froze%20uncooked%20kernels%20from%20about%2010%20cobs%20late%20this%20summer%20when%20corn%20was%20incredibly%20inexpensive).%3C/p%3E%3Cp%3EPouring%20a%20little%20water%20over%20the%20lot,%20I%20dotted%20the%20fish%20with%20a%20couple%20teaspoons%20of%20butter,%20a%20teaspoon%20of%20dill%20seed,%20and%20the%20juice%20from%20one%20lemon,%20and%20with%20the%20lid%20on%20the%20skillet,%20I%20slow-cooked%20the%20meal,%20again%20for%20about%2015%20mins.%3C/p%3E%3Cp%3EThe%20meal%20to%20the%20left%20is%20one%20mahi%20mahi%20fillet%20cut%20in%20half,%20so%20it's%20about%20a%203%20ounce%20portion.%20I%20marinated%20the%20fish%20in%20Braggs,%20lime%20juice%20and%20a%20little%20honey%20(some%20crushed%20garlic%20and%20grated%20ginger%20root,%20which%20are%20optional)%20and%20then%20I%20barbecued%20the%20fillet,%20and%20a%20baby%20bok%20choy.%3C/p%3E%3Cp%3EMaking%20the%20most%20of%20the%20leftover%20marinade,%20I%20added%20it%20to%20a%20pot%20with%203%20cups%20of%20water%20and%203/4%20of%20a%20cup%20of%20polenta,%20cooking%20the%20mixture%20over%20low%20heat%20for%20about%2030%20mins.%3C/p%3E%3Cp%3EAs%20you%20can%20see%20the%20fish%20is%20sitting%20atop%20the%20set%20polenta%20with%20a%20side%20of%20green%20salsa%20that%20I%20made%20with%20cilantro,%20cucumber%20and%20spring%20onion.%3C/p%3E%3Cp%3EMahi%20Mahi%20can%20be%20dry%20and%20lacking%20in%20flavor%20if%20overcooked%20and%20served%20plain.%20So%20consider%20slow%20cooking%20it%20with%20liquid%20(water,%20stock,%20wine)%20and%20fresh%20vegetables,%20as%20in%20the%20two%20skillet%20dishes%20above.%20Or%20marinate%20it%20and%20then%20grill%20the%20fish%20for%20maybe%2010%20mins,%20since%20this%20will%20ensure%20that%20it's%20flavorful%20and%20moist.%3C/p%3E){kind=link}
