%20chocolate,%20I%20can't%20eat%20chocolate%20mousse%20that's%20been%20made%20with%20tempered%20eggs%20or%20raw%20frothy%20egg%20whites.%20I%20can't%20even%20brush%20beaten%20egg%20over%20pastries%20or%20breads%20before%20baking%20because%20it%20comes%20out%20too%20eggy%20tasting%20in%20the%20end.%3C/p%3E%3Cp%3EAnd%20it%20isn't%20so%20much%20about%20salmonella.%20It's%20the%20smell.%20If%20I%20catch%20the%20scent%20of%20raw,%20undercooked,%20or%20overcooked%20eggs...no%20way%20I'm%20eating%20whatever%20it%20is.%3C/p%3E%3Cp%3EI%20have%20egg%20phobia.%20Wait.%20Let%20me%20just%20settle%20onto%20the%20couch%20for%20a%20minute.%20There%20we%20go.%20It%20all%20started%20when%20I%20was%208.%20I%20was%20helping%20make%20Sunday%20breakfast%20before%20church.%20My%20job%20was%20to%20crack%20the%20eggs.%20I%20cracked%20a%20few%20into%20the%20stainless%20steel%20bowl,%20noticing%20that%20the%20combination%20of%20raw%20egg%20and%20stainless%20steel%20gave%20off%20a%20bizarre%20(and%20unpleasant)%20odor.%20Then%20it%20happened.%20I%20reached%20for%20another%20egg%20and%20cracked%20it.%20It%20was%20as%20if%20the%20contents%20were%20under%20pressure.%20When%20I%20cracked%20the%20egg%20on%20the%20side%20of%20the%20bowl,%20it%20exploded,%20showering%20me%20and%20my%20fancy%20church%20clothes%20with%20rotten%20egg.%20I%20shrieked.%20I%20cried.%20I%20swore%20off%20eggs%20for%20a%20very%20long%20time.%3C/p%3E%3Cp%3EThen%20one%20day,%20Tyler%20Florence%20helped%20me%20work%20through%20the%20demons%20of%20my%20past.%20I%20was%20watching%20Food%20911%20(ok,%20I%20was%20watching%20Tyler%20Florence,%20whatever).%20Tyler%20was%20helping%20some%20gal%20make%20breakfast%20for%20a%20shower-brunch-party%20kinda%20thing.%20He%20showed%20her%20how%20to%20make%20the%20perfect%20scrambled%20eggs.%20I%20remember%20him%20telling%20this%20woman%20that%20knowing%20how%20to%20master%20scrambled%20eggs%20was%20a%20sign%20of%20a%20good%20cook.%20And%20then%20he%20topped%20the%20scrambled%20eggs%20with%20slices%20of%20avocado,%20said%20something%20like%20%22awright,%20cool,%22%20then%20everyone%20smiled%20and%20ate.%20And%20I%20had%20some%20serious%20thoughts%20going%20on.%20%231:%20I%20want%20to%20be%20a%20good%20cook.%20%232:%20Those%20eggs%20actually%20look%20pretty%20good%20and%20so%20far%20Tyler%20hasn't%20steered%20me%20wrong.%20%233:%20avocado%20on%20top%20of%20eggs%20is%20just%20odd%20enough%20for%20me%20to%20have%20to%20try.%3C/p%3E%3Cp%3EIf%20your%20scrambled%20eggs%20are%20just%20so-so,%20if%20they%20are%20hard%20and%20rubbery,%20if%20they%20are%20not%20light,%20fluffy,%20cloud-like%20heavenly%20bits%20of%20joy...try%20this%20version.%20And%20add%20some%20sliced%20avocado.%20Don't%20wrinkle%20your%20nose%20just%20yet.%20Buttery,%20creamy%20avocado%20works%20well%20with%20the%20eggs.%3C/p%3E%3Cp%3EPerfect%20Scrambled%20Eggs%20w/%20Avocado%3C/p%3E%3Cp%3Efrom%20Tyler%20Florence/%20Food%20911%3C/p%3E%3Cp%3ECrack%20the%20eggs%20into%20a%20bowl.%20Add%20the%20cream%20and%20whisk%20until%20the%20eggs%20look%20foamy%20and%20light.%20Heat%20a%20non-stick%20skillet%20over%20medium%20heat.%20Melt%20the%20butter%20until%20it%20foams,%20then%20turn%20the%20heat%20down%20to%20low%20and%20slowly%20pour%20in%20the%20eggs.%20Using%20a%20heat%20resistant%20rubber%20spatula,%20slowly%20stir%20the%20eggs%20from%20the%20outside%20of%20the%20pan%20to%20the%20center.%20Once%20the%20eggs%20begin%20to%20set,%20stirring%20slowly%20will%20create%20large,%20cloud-like%20curds.%20This%20sounds%20easy%20but%20perfect%20scrambled%20eggs%20that%20are%20soft%20and%20custard-like%20with%20no%20brown%20color%20are%20a%20sign%20of%20a%20really%20good%20cook.%20This%20process%20takes%20about%2010%20minutes.%20Season%20the%20eggs%20with%20a%20few%20cranks%20of%20black%20pepper%20and%20good%20salt,%20like%20fleur%20de%20sel.%20Serve%20with%20a%20few%20slices%20of%20avocado%20and%20a%20little%20chopped%20fresh%20chive.%20Serves%20about%206.%3C/p%3E%3Cp%3E*I%20also%20add%20a%20pinch%20of%20salt%20to%20the%20avocado%20slices%3C/p%3E%3Cp%3EI'm%20not%20into%20fussy%20breakfasts...unless%20someone%20else%20cooks.%20This%20is%20easy.%3C/p%3E%3Cp%3EWhisk%20eggs%20and%20cream%20together%20until%20the%20eggs%20turn%20a%20light%20color%20and%20are%20frothy.%20The%20cream%20and%20the%20whisking%20help%20with%20the%20fluff%20factor.%3C/p%3E%3Cp%3EMelt%20the%20butter%20until%20it%20turns%20foamy,%20a%20good%20indicator%20of%20when%20the%20pan%20is%20ready.%20This%20is%20my%20egg%20pan.%20I%20can't%20make%20scrambled%20eggs%20in%20any%20other.%3C/p%3E%3Cp%3EBefore%20adding%20the%20eggs,%20make%20sure%20the%20fire%20is%20on%20low.%20Don't%20rush%20it.%20This,%20and%20the%20folding%20technique%20are%20how%20you're%20going%20to%20get%20that%20cloud-like,%20fluffy%20goodness.%20And%20remember,%20this%20comes%20from%20someone%20with%20egg%20phobia.%3C/p%3E%3Cp%3EIt's%20hard%20to%20explain%20the%20folding%20deal%20in%20words.%20Let's%20go%20to%20video.%3C/p%3E%3Cp%3EAll%20that's%20left%20is%20to%
