I'm a huge fan of omelets, I've said it a million times and damn it I'll say it again....I love options & omelets definitely give you just that! It's kinda of like oatmeal, you can put anything into it and it'll turn out good. That's what I call a good investment. BUT with every good investment there are always some challenges... omelets aren't the easiest thing to take on-the-go which is where this recipe comes in handy!

I give you...omelet muffins! **ta-dahhh** (picture me holding jazz hands out to the side - opt look at that another Bring it On reference) You can never take the cheerleader out of the girl that is fo sho!

Ingredients//

Directions//

Easy as.....1 2 3... (okay 5, but it feels like 3 I swear)

Chop mushrooms, green beans, bell pep

Crack and separate 5 eggs from the yolk & place into a little tin bowl (it HAS TO BE tin)

No I'm totally kidding it can be any kind of bowl

Add whole egg - whisk until blended - isn't whisk such a great word?

Pour into little mini muffin trays

Bake on 350 degrees for 15 minutes - until egg had hardened (ew that sounds weird...just go with it)
