.%20I%20have%20been%20planning%20to%20make%20carrot%20halwa%20flavored%20cake%20for%20a%20while%20now.%20Initially%20I%20wanted%20to%20make%20cupcakes,%20but%20after%20researching%20on%20various%20recipes%20I%20ended%20up%20making%20it%20as%20a%20bundt%20cake.%3C/p%3E%3Cp%3EBundt%20cakes%20are%20always%20gorgeous%20and%20this%20carrot%20cake%20was%20not%20just%20beautiful%20to%20look%20at,%20it%20tasted%20a.m.a.z.i.n.g.%20It%20was%20moist%20because%20of%20ricotta%20cheese%20and%20with%20the%20touch%20of%20ground%20cardamom,%20it%20tasted%20almost%20like%20carrot%20halwa,%20especially%20the%20day%20after%20it%20was%20baked.%20I%20topped%20it%20with%20a%20simple%20cream%20cheese%20and%20powdered%20sugar%20icing%20that%20tasted%20almost%20like%20khoya%20making%20it%20more%20like%20my%20beloved%20carrot%20halwa.%3C/p%3E%3Cp%3EAs%20I%20was%20looking%20for%20an%20eggless%20carrot%20cake%20recipe,%20I%20found%20Roxana's%20recipe%20which%20uses%20ricotta%20cheese.%20Her%20pictures%20were%20breathtaking%20and%20I%20could%20almost%20taste%20the%20moist%20carrot%20cake%20right%20through%20my%20monitor.%20I%20adapted%20the%20recipe%20to%20fit%20into%20my%20carrot%20halwa%20theme%20and%20I%20have%20to%20say%20it%20was%20a%20super%20duper%20hit%20at%20home.%3C/p%3E%3Cp%3EThis%20recipe%20is%20very%20easy%20to%20put%20together.%20All%20the%20ingredients%20for%20the%20cake%20go%20right%20into%20the%20food%20processor%20and%20then%20straight%20into%20the%20bundt%20pan%20to%20bake.%20Also%20the%20recipe%20uses%20cold%20butter,%20so%20no%20need%20to%20worry%20about%20remembering%20to%20leave%20it%20out%20on%20the%20counter.%20I%20added%20almonds,%20cashews,%20raisins%20and%20ground%20cardamom%20to%20get%20the%20traditional%20carrot%20cake%20flavor.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EFor%20the%20Carrot%20Cake:%20Preheat%20oven%20to%20375%C2%B0F.%20Grease%20and%20flour%20a%2012cup%20bundt%20cake%20pan.%3C/p%3E%3Cp%3EIn%20a%20food%20processor%20add%20the%20flours,%20sugar,%20baking%20powder,%20baking%20soda,%20ground%20cardamom%20and%20salt.%20Pulse%20to%20mix.%3C/p%3E%3Cp%3EAdd%20the%20diced%20cold%20butter%20and%20pulse%20few%20times%20until%20it%20resembles%20fine%20breadcrumbs.%3C/p%3E%3Cp%3EAdd%20the%20ricotta%20cheese,%20milk%20and%20shredded%20carrots%20and%20pulse%20to%20combine.%20Add%20the%20nuts%20and%20raisins%20and%20pulse%202%20to%203%20times%20to%20incorporate%20them.%3C/p%3E%3Cp%3ESpoon%20into%20the%20prepared%20baking%20pan%20and%20bake%20in%20preheated%20oven%20for%2030~35%20minutes%20or%20until%20a%20toothpick%20inserted%20into%20the%20center%20comes%20out%20clean.%3C/p%3E%3Cp%3ERemove%20from%20the%20oven%20and%20leave%20it%20for%20a%20few%20minutes%20before%20turning%20it%20out%20onto%20the%20wire%20rack%20to%20cool%20completely.%3C/p%3E%3Cp%3EMake%20the%20Icing:%20Combine%20all%20the%20ingredients%20for%20the%20icing%20in%20a%20small%20bowl%20and%20beat%20with%20a%20fork%20to%20make%20a%20thick%20icing.%20Add%20enough%20milk%20to%20get%20the%20pouring%20consistency.%3C/p%3E%3Cp%3EPour%20evenly%20over%20completely%20cooled%20cake.%20Enjoy!!%3C/p%3E%3Cp%3ELets%20check%20out%20what%20my%20fellow%20marathoners%20have%20cooked%20today%20for%20BM%23%2034.%3C/p%3E){kind=link}
