%20)%20and%20of%20course%20there's%20Mother's%20day%20celebrations.%20It%20is%20also%20my%20blog%20anniversary%20month%20--%20Cook's%20Hideout%20has%20completed%207%20years%20of%20blogging.%3C/p%3E%3Cp%3EBlogging%20years%20seem%20to%20me%20like%20dog%20years.%20There%20are%20a%20quite%20a%20few%20blogs%20that%20were%20active%20at%20one%20time,%20but%20are%20no%20longer%20virtually%20alive.%20I%20feel%20like%20a%20veteran%20among%20many%20new%20and%20upcoming%20food%20bloggers.%20I%20have%20to%20thank%20my%20family%20for%20their%20support%20and%20patience%20without%20whom%20I%20wouldn't%20have%20been%20blogging%20for%20so%20long.%20I%20was%20telling%20my%20mom%20the%20other%20day%20that%20I%20cook%20and%20eat%20well%20even%20when%20I'm%20alone%20because%20of%20my%20blog.%3C/p%3E%3Cp%3EBig%20thanks%20to%20Valli,%20the%20master%20mind%20behind%20Blogging%20marathon%20and%20all%20my%20fellow%20marathoners%20for%20their%20infectious%20enthusiasm.%3C/p%3E%3Cp%3EI%20have%20never%20made%20a%20cake%20for%20myself,%20but%20this%20time%20I%20wanted%20to%20use%20the%20skills%20I%20learnt%20in%20my%20Wilton%20cake%20decorating%20class.%20Also%20I%20wanted%20to%20try%20one%20of%20the%20chocolate%20frosting%20recipes%20that%20I%20had%20pinned%20on%20Pinterest.%20This%20frosting%20uses%20some%20uncommon%20ingredients%20like%20cooked%20flour%20and%20granulated%20sugar%20along%20with%20other%20regulars%20liek%20butter%20and%20cocoa.%20It%20is%20a%20little%20time%20consuming%20to%20make,%20but%20the%20end%20result%20is%20well%20worth%20the%20effort%20--%20its%20not%20too%20sweet%20and%20not%20too%20greasy.%20I%20thought%20it%20went%20perfectly%20with%20the%20chocolate%20cake.%20Do%20give%20this%20cake%20a%20try!!!!!%3C/p%3E%3Cp%3EComing%20to%20today's%20cake,%20recipe%20is%20adapted%20from%20'Vegan%20with%20a%20Vengeance'%20by%20Isa%20Chandra.%20I%20modified%20the%20recipe%20just%20a%20little%20bit%20to%20include%20wholewheat%20pastry%20flour%20and%20reduced%20the%20quantity%20of%20sugar.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%C2%B0F%20(180%C2%B0C).%20Grease%202%208%22%20round%20cake%20pans.%20I%20used%20my%20heart%20shaped%20cake%20pan.%3C/p%3E%3Cp%3ESift%20together%20the%20flours,%20cocoa%20powder,%20baking%20soda,%20baking%20powder%20and%20salt.%3C/p%3E%3Cp%3ECombine%20the%20milk,%20oil,%20jam,%20the%20vanilla%20and%20the%20sugar%20in%20a%20large%20bowl%20and%20mix%20it%20well%20with%20a%20fork.%20The%20jam%20should%20be%20mostly%20dissolved%20with%20the%20rest%20of%20the%20ingredients;%20some%20small%20lumps%20are%20fine.%3C/p%3E%3Cp%3EAdd%20the%20dry%20ingredients%20to%20the%20wet%20ingredients%20in%20batches%20and%20mix%20until%20everything%20is%20incorporated.%3C/p%3E%3Cp%3EDivide%20the%20batter%20between%20the%202%20prepared%20pans%20and%20bake%20for%2040-45%20minutes,%20or%20until%20a%20toothpick%20or%20a%20cake%20tester%20inserted%20in%20the%20center%20of%20the%20cake%20comes%20out%20clean.%3C/p%3E%3Cp%3ERemove%20from%20the%20pan%20and%20let%20cool%20in%20pans%20for%2010-15%20mins,%20then%20run%20a%20knife%20around%20the%20cake%20and%20remove%20onto%20a%20wire%20rack.%20Cool%20completely%20before%20frosting.%3C/p%3E%3Cp%3EPin%20It%20Now!%3C/p%3E){kind=link}
