%20is%20when%20all%20the%20holiday%20goodies%20go%20on%20sale.%20In%20the%20past,%20I've%20usually%20done%20the%20majority%20of%20my%20Christmas%20decor%20shopping%20the%20days%20immediately%20following%20the%20holiday...%20and%20this%20year%20was%20no%20different.%20So%20far%20I've%20purchased:%20wrapping%20paper,%20ribbons,%20bows,%20wreaths,%20tree%20ornaments,%20chocolates%20and%20of%20course...%20EGGNOG.%3C/p%3E%3Cp%3EI%20purposefully%20held%20off%20on%20buying%20eggnog%20before%20Christmas%20because%20I%20knew%20that%20Superstore%20would%20have%20a%20sale%20...%20and%20low-and-behold,%20on%20the%2027th%20of%20December%20eggnog%20was%20on%20sale%20for%20$1%20a%20liter.%20Having%20bought%204%20cartons%20of%20the%20deliciously%20creamy%20beverage,%20I%20realized%20that%20I%20went%20a%20little%20overboard%20and%20would%20need%20to%20finish%20up%20the%20stuff%20quickly...%20yes,%20it's%20true%20folks%20eggnog%20does%20not%20last%20forever%20:(%3C/p%3E%3Cp%3ESince%20I'm%20the%20only%20person%20in%20my%20family%20who's%20a%20real%20fan%20of%20the%20eggy-nutmeggy%20concoction%20it%20took%20me%20a%20while%20to%20figure%20out%20how%20I'd%20bamboozle%20the%20rest%20of%20my%20family%20to%20help%20me%20in%20the%20consumption%20of%20the%20eggnog.%20Finally,%20my%20baking%20brain%20decided%20that%20an%20eggnog%20cake%20would%20be%20just%20the%20thing%20to%20bridge%20the%20gap%20between%20my%20family's%20tummies%20and%20the%20nog.%3C/p%3E%3Cp%3EEggnog%20Cake%20with%20Rum%20Glaze%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3E1.%20Preheat%20the%20oven%20to%20350degrees%20and%20prepare%20a%209-inch%20round%20cake%20pan.%3C/p%3E%3Cp%3E2.%20In%20a%20bowl,%20combine%20flours,%20baking%20powder,%20salt%20and%20nutmeg.%3C/p%3E%3Cp%3E3.%20In%20a%20separate%20bowl,%20mix%20together%20the%20eggs,%20sugar,%20eggnog,%20butter,%20vanilla%20and%20rum.%3C/p%3E%3Cp%3E4.%20Add%20wet%20ingredients%20to%20the%20dry%20mixture%20and%20mix%20until%20just%20combined.%3C/p%3E%3Cp%3E5.%20Bake%20for%2045-50minutes%20or%20until%20a%20toothpick%20inserted%20comes%20out%20clean.%20Remove%20cake%20and%20place%20on%20wire%20cooling%20rack,%20with%20a%20baking%20sheet%20beneath,%20while%20you%20prepare%20the%20rum%20glaze.%3C/p%3E%3Cp%3ERum%20Glaze%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E-%201%20cup%20sugar%3C/p%3E%3Cp%3E-%203%20tbsp%20spiced%20rum%3C/p%3E%3Cp%3E-%201/2%20cup%20eggnog%3C/p%3E%3Cp%3E-%201%20tbsp%20butter%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3E1.%20Place%20sugar%20in%20a%20small%20saucepan%20on%20the%20stove%20over%20medium%20heat.%20Do%20not%20stir%20sugar,%20simply%20allow%20for%20the%20heat%20to%20cause%20sugar%20to%20brown%20and%20become%20liquid-like.%20If%20you%20wish%20to%20stir%20the%20sugar,%20swirl%20the%20saucepan%20gently.%20Continue%20heating%20sugar%20until%20all%20of%20it%20has%20dissolved.%3C/p%3E%3Cp%3E2.%20Lower%20the%20heat%20and%20carefully%20add%20in%20the%20rum.%20Be%20cautious,%20as%20the%20addition%20of%20liquid%20to%20the%20hot%20sugar%20can%20cause%20the%20syrup%20to%20bubble%20and%20splatter%20out%20of%20the%20pan%20and%20cause%20a%20serious%20burn-hazard.%3C/p%3E%3Cp%3E3.%20Once%20the%20mixture%20stops%20bubbling,%20stir%20the%20rum%20into%20the%20sugar%20to%20incorporate%20the%20flavor.%3C/p%3E%3Cp%3E4.%20Carefully%20add%20in%20the%20eggnog,%201/8%20cup%20at%20a%20time.%20Be%20cautious,%20as%20the%20addition%20of%20eggnog%20can%20cause%20the%20sugar-rum%20mixture%20to%20foam%20and%20expand.%20By%20adding%20eggnog%201/8%20cup%20at%20a%20time,%20you%20minimize%20the%20risk%20of%20the%20glaze%20overflowing%20the%20saucepan.%20Continue%20adding%20the%20remainder%20of%20the%20eggnog,%20mixing%20thoroughly%20to%20incorporate%20the%20flavor.%3C/p%3E%3Cp%3E5.%20Remove%20pan%20from%20heat%20and%20add%20in%20the%20butter,%20mixing%20until%20butter%20has%20melted.%3C/p%3E%3Cp%3E6.%20Gently%20spoon%201/2%20of%20the%20glaze%20over%20the%20top%20of%20the%20eggnog%20cake%20(I%20pierced%20the%20surface%20of%20the%20cake%20with%20a%20fork%20to%20allow%20for%20the%20glaze%20to%20seep%20into%20the%20cake,%20but%20this%20is%20optional).%3C/p%3E%3Cp%3E7.%20For%20serving:%20slice%20the%20cake%20into%20pieces%20and%20provide%20the%20remaining%20glaze%20for%20spooning%20over%20each%20individual%20slice.%3C/p%3E%3Cp%3EI%20was%20a%20bit%20wary%20of%20whether%20or%20not%20the%20taste%20of%20the%20eggnog%20would%20be%20palatable%20in%20cake-form,%20but%20there%20was%20nothing%20to%20worry%20about.%20The%20cake%20plus%20the%20rum-eggnog%20glaze%20gave%20the%20dessert%20a%20wonderfully%20nutmeg-eggnog%20taste...%20it%20was%20fantastic!%20This%20cake%20is%20quite%20heavy%20and%20dense,%20with%20the%20crumbly%20and%20moist%20texture%20of%20a%20pound%20cake.%20The%20glaze%20is%20very,%20very%20sweet%20and%20I%20could%20only%20manage%20to%20finish%20a%20small%20piece%20of%20the%20cake%20as%20it%20was%20so%20rich.%20I'll%20probably%20make%20this%20cake%20in%20the%20future;%20it%20will%20actually%20make%20a%20nice%20gift%20if%20packaged%20in%20a%20cute%20loaf-pan%20for%20next%20Christmas,%20or%20I%20could%20even%20make%20some%20tiny%20cupcakes%20and%20frost%20them%20with%20eggnog-rum%20buttercream?!%20Oh,%20the%20possibilities!%3C/p%3E){kind=link}
