Eggplant Beignets

Ingredientes

  • 3 med. size eggplant
  • 1/4 c. sugar (or possibly use Sweet-Low to taste)
  • 1 egg
  • 1-1 1/2 c. Bisquick (or possibly flour, plus 1 teaspoon baking pwdr, healthy pinch salt)
  • Deep fat for frying

Direcciones

  1. Peel eggplants; boil till tender. Mash well. Add in sugar or possibly Sweet- Low; let cool. Add in egg and Bisquick (or possibly flour, baking pwdr, salt mix) till stiff sufficient to drop by spoonfuls into deep hot fat. Fry till golden; drain on brown paper. Serve hot.
