%20I%E2%80%99m%20glad%20that%20I%20eventually%20came%20to%20this%20realization%20because%20otherwise%20I%20would%20be%20missing%20out%20on%20so%20many%20fast%20and%20relatively%20inexpensive%20dishes%20as%20well%20as%20the%20health%20benefits%20of%20the%20egg%20itself.%3C/p%3E%3Cp%3EOf%20all%20the%20ways%20I%20love%20them%E2%80%93softly%20scrambled,%20poached,%20in%20an%20omelette%20or%20tortilla,%20or%20even%20baked%20in%20a%20sauce%E2%80%93I%20think%20my%20absolute%20favorite%20is%20the%20French%20classic%20ouefs%20en%20cocotte.%20It%E2%80%99s%20so%20easy%20to%20make,%20can%20be%20endlessly%20modified%20to%20one%E2%80%99s%20own%20taste,%20and%20unlike%20omelette%20cookery%20requires%20very%20little%20actual%20cooking%20skill%20aside%20from%20safely%20removing%20the%20ramekin%20from%20the%20hot%20water%20bath%20(or%20bain%20marie)%20when%20it%E2%80%99s%20done.%20Rachel%20Khoo%E2%80%99s%20take%20on%20this%20dish%20was%20what%20finally%20got%20me%20on%20board%20with%20it%20as%20she%20employed%20some%20creme%20fraiche%20and%20salmon%20roe%20along%20with%20nutmeg%20and%20dill%20to%20bring%20it%20together,%20and%20then%20later%20when%20I%20was%20flipping%20through%20Mimi%20Thorrison%E2%80%99s%20cookbook%20I%20found%20her%20version%20that%20employed%20mushrooms%20and%20onions%20cooked%20in%20a%20red%20wine%20sauce%20to%20also%20pique%20my%20interest.%20I%20tried%20Rachel%E2%80%99s%20first%20during%20a%20stint%20when%20Michael%20was%20away%20on%20business,%20and%20initially%20I%20was%20really%20frustrated%20with%20it%20because%20when%20I%20would%20check%20in%20after%20twelve%20minutes,%20then%20fifteen,%20and%20then%20twenty,%20it%20didn%E2%80%99t%20seem%20like%20anything%20was%20actually%20happening.%20I%20think%20I%20let%20it%20stay%20in%20there%20for%20twenty-five%20minutes%20altogether%20and%20was%20preparing%20myself%20to%20spoon%20into%20a%20fully-cooked%20egg%20yolk,%20but%20happily%20it%20was%20far%20runnier%20than%20I%20expected.%20When%20Michael%20and%20I%20tried%20Mimi%E2%80%99s%20version%20a%20few%20months%20later%20we%20also%20let%20the%20eggs%20go%20for%20longer%20than%20prescribed%20and%20yet%20the%20results%20were%20similar.%20It%20was%20then%20when%20it%20dawned%20on%20Michael%20where%20the%20disconnect%20lay:%20given%20that%20both%20of%20these%20women%20are%20European,%20they%20are%20naturally%20accustomed%20to%20using%20eggs%20that%20aren%E2%80%99t%20refrigerated.%20No%20refrigeration%20means%20that%20egg-cooking%20times%20are%20going%20to%20be%20much%20shorter%20as%20a%20rule.%3C/p%3E%3Cp%3EEggs%20in%20pots%20with%20a%20red%20wine%20sauce,%20via%20Mimi%20Thorisson.%3C/p%3E%3Cp%3EI%20felt%20kind%20of%20stupid%20that%20I%20couldn%E2%80%99t%20come%20to%20that%20conclusion%20myself%20because%20OF%20COURSE.%20In%20his%20omelette%20recipe%20Alton%20Brown%20has%20you%20cover%20your%20eggs%20in%20fairly%20warm%20tap%20water%20for%20about%20five%20minutes%20to%20let%20them%20come%20to%20room%20temperature,%20and%20naturally%20I%20never%20thought%20to%20do%20that%20for%20any%20other%20dishes%20that%20would%20benefit%20from%20such%20a%20procedure%20and%20instead%20would%20just%20gape%20at%20them%20in%20the%20oven,%20wondering%20what%20was%20taking%20them%20so%20damn%20long%20to%20cook.%3C/p%3E%3Cp%3ESo%20when%20I%20made%20myself%20some%20eggs%20en%20cocotte%20for%20a%20light%20weekend%20lunch%20this%20past%20Sunday,%20I%20made%20sure%20they%20ended%20up%20in%20a%20hot%20bath%20for%20five%20minutes%20before%20I%20cracked%20them%20into%20my%20ramekin.%20My%20ego%20was%20slightly%20comforted%20by%20the%20fact%20that%20while%20the%20bath%20helped,%20I%20still%20needed%20a%20couple%20of%20extra%20minutes%20to%20help%20the%20eggs%20set.%3C/p%3E%3Cp%3EI%20share%20with%20you%20my%20sheepish%20tale%20of%20pitiful%20egg%20cooking%20to%20encourage%20you%20to%20give%20this%20dish%20a%20try.%20Use%20what%20you%20have%20available,%20whether%20it%E2%80%99s%20some%20leftover%20bits%20from%20dinner%20a%20few%20nights%20ago%20or%20just%20some%20herbs%20and%20spices%20that%20seem%20particularly%20appealing%20at%20the%20moment.%20Rachel%20calls%20for%20dill%20in%20hers,%20but%20I%20prefer%20tarragon%20with%20my%20eggs%20so%20I%20went%20that%20particular%20route%20with%20this%20iteration,%20and%20while%20I%20did%20not%20have%20any%20salmon%20eggs%20around%20as%20a%20garnish,%20a%20drizzle%20of%20really%20good%20Catalan%20olive%20oil%20and%20some%20sea%20salt%20seemed%20to%20be%20all%20the%20flourish%20I%20needed.%3C/p%3E%3Cp%3EEggs%20in%20pots,%20or%20ouefs%20en%20cocotte%3C/p%3E%3Cp%3EAdapted%20from%20Rachel%20Khoo%E2%80%99s%20The%20Little%20Paris%20Kitchen%3C/p%3E%3Cp%3EServes%201%20as%20a%20light%20lunch%20or%20starter%20for%20dinner,%20and%20multiply%20as%20necessary.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20degrees.%20In%20the%20meantime,%20place%20the%20eggs%20in%20a%20hot%20water%20bath%20for%20about%20five%20minutes%20to%20allow%20them%20to%20come%20to%20room%20temperature.%3C/p%3E%3Cp%3ESeason%20the%20creme%2
