A delicious combo of tomato, shrimp, and salad, all rolled into one healthy and attractive side dish!

- trim the rounded end of the tomatoes to enable them to stand alone
- cut the tomatoes into halves
- scoop out centers
- combine the tomato centers with the celery, onion, chili peppers, green and red peppers, basil and oregano
- combine well
- spoon into the tomato halves

- The shrimp:
- pan fry the shrimp until nicely pink.
- Plunge shrimp into cold water to stop the cooking process
- arrange the shrimp on the tomatoes as illustrated
- Garnish with parsley sprigs, and set in a bed of tossed salad
- Refrigerate until ready to serve
