Receta Elaine's Shrimp and Salad Stuffed Tomatoes
A delicious combo of tomato, shrimp, and salad, all rolled into one healthy and attractive side dish!

Ingredientes
- 6 medium sized tomatoes (stuffing tomatoes, preferably, although the regular tomatoes will work)
- 1/4 inner stalk celery, finely chopped
- 1 tbsp dehydrated onion or 2 tbsp fresh
- 1/2 tsp chili pepper
- about 30 medium-sized raw shrimp, tail on, de-veined
- 2 tbsp olive oil
- 2 tbsp finely chopped sweet green pepper
- 2 tbsp finely chopped sweet red pepper
- 1 tsp oregano
- 1 tsp basil
- sprigs of fresh parsley
- salt and pepper to taste
Direcciones
- 1. trim the rounded end of the tomatoes to enable them to stand alone
- 2. cut the tomatoes into halves
- 3. scoop out centers
- 4. combine the tomato centers with the celery, onion, chili peppers, green and red peppers, basil and oregano
- 5. combine well
- 6. spoon into the tomato halves
- 7. =============================
- 8. The shrimp:
- 9. pan fry the shrimp until nicely pink.
- 10. Plunge shrimp into cold water to stop the cooking process
- 11. arrange the shrimp on the tomatoes as illustrated
- 12. Garnish with parsley sprigs, and set in a bed of tossed salad
- 13. Refrigerate until ready to serve
