%3C/p%3E%3Cp%3ESeptember%204,%202009%3C/p%3E%3Cp%3Eby%20Heather%3C/p%3E%3Cp%3EIn%20an%20effort%20to%20get%20more%20comfortable%20in%20the%20kitchen,%20I%20try%20to%20take%20classes%20whenever%20I%20can.%20I%20don%E2%80%99t%20know%20that%20I%E2%80%99ve%20ever%20made%20one%20thing%20from%20any%20of%20the%20classes%20(aside%20from%20the%20couscous%20recipe%20below)%20ever%20again%20(sensing%20a%20pattern%20here?).%20%20My%20cabinets%20are%20filled%20with%20all%20of%20the%20utensils%20I%E2%80%99ve%20sworn%20I%E2%80%99d%20use%20after%20the%20class%E2%80%94the%20mats%20and%20chopsticks%20from%20my%20sushi%20making%20class%20are%20still%20in%20the%20bag%20mocking%20me%20each%20time%20I%20open%20the%20drawer%E2%80%94and,%20like%20the%20road%20to%20hell,%20my%20kitchen%20is%20paved%20with%20the%20best%20of%20intentions.%3C/p%3E%3Cp%3ELast%20winter%20I%20took%20a%20Moroccan%20cooking%20class%20at%20The%20Chopping%20Block%20with%20the%20hope%20that%20I%20could%20at%20least%20learn%20to%20prepare%20one%20entire%20meal%20that%20I%20could%20serve%20to%20people%20one%20day.%20%20I%20don%E2%80%99t%20know%20who%20those%20people%20are%20or%20why%20they%20wouldn%E2%80%99t%20want%20to%20just%20eat%20out,%20but%20that%20was%20my%20plan.%20%20On%20the%20menu%20that%20day%20was%20fennel%20spiced%20chickpea%20flatbread,%20Moroccan%20braised%20chicken%20with%20spices%20and%20apricots,%20%20a%20date,%20saffron%20and%20mint%20couscous%20salad%20and%20an%20orange%20and%20saffron%20cr%C3%A8me%20brul%C3%A9e.%20%20I%20was%20paired%20with%20a%20mother%20and%20daughter%20who%20had%20some%20obvious%20tension%20between%20them.%20%20The%20mother%20felt%20she%20knew%20everything%20there%20was%20to%20know%20about%20cooking%20and%20the%20daughter%20couldn%E2%80%99t%20have%20cared%20less%20about%20the%20class%20or%20learning%20how%20to%20dice%20an%20onion.%20%20%20I%20tend%20to%20side%20with%20mothers%20in%20these%20little%20tiffs,%20mainly%20because%20I%20can%20only%20imagine%20what%20my%20own%20mother%20has%20had%20to%20put%20up%20with%20over%20the%20years,%20but%20after%20the%20mom%20tried%20to%20school%20me%20on%20pouring%20cream%20into%20a%20mixer%20and%20then%20tried%20to%20grab%20a%20knife%20out%20of%20my%20hand%20while%20I%20was%20%E2%80%9Cincorrectly%E2%80%9D%20chopping%20dates%20(is%20there%20such%20a%20thing?)%20I%20understood%20why%20the%20daughter%20rolled%20her%20eyes%20every%2025%20seconds.%20%20She%20and%20I%20shared%20a%20brief%20moment%20of%20schadenfreude%20when%20the%20mom%20poured%20an%20entire%20ramekin%20of%20saffron%20into%20our%20chicken%20(when%20we%20were%20supposed%20to%20use%20four%20strands).%20%20The%20nice%20instructor%E2%80%99s%20head%20almost%20popped%20off,%20considering%20saffron%20can%20run%20about%20$10%20a%20gram%20and%20Mommy%20Dearest%20had%20just%20poured%20about%20$100%20into%20our%20pan%20of%20chicken%20breasts.%3C/p%3E%3Cp%3EAt%20any%20rate,%20the%20meal%20was%20actually%20pretty%20simple,%20and%20looks%20impressive%20enough%20to%20serve%20when%20those%20mystery%20people%20come%20over.%20%20It%E2%80%99s%20a%20little%20much%20for%20a%20random%20Tuesday,%20though,%20which%20is%20why%20I%E2%80%99ve%20never%20tried%20it%20at%20home.%20%20The%20only%20part%20of%20the%20meal%20I%E2%80%99ve%20duplicated%20is%20the%20couscous,%20which%20is%20the%20perfect%20thing%20to%20take%20to%20a%20picnic%20or%20make%20a%20batch%20of%20and%20have%20for%20lunch%20during%20the%20week.%20%20What%20I%20like%20most%20about%20it%20is%20that%20once%20you%20get%20the%20basics%20in,%20anything%20you%20like%20can%20be%20added%20like%20tomatoes,%20tuna,%20or%20olives.%20I%E2%80%99ve%20also%20done%20it%20with%20orzo%20instead%20of%20couscous,%20which%20turned%20out%20just%20as%20well%20(add%20a%20little%20olive%20oil%20while%20it%E2%80%99s%20cooling).%3C/p%3E%3Cp%3ESo%20if%20you%E2%80%99re%20lucky%20enough%20to%20live%20somewhere%20warm%20enough%20for%20a%20picnic%20this%20Labor%20Day,%20here%E2%80%99s%20your%20side%20dish.%20%20Invite%20me%20over%20when%20you%20decide%20to%20make%20the%20chicken%E2%80%A6%3C/p%3E%3Cp%3EFrom%20The%20Chopping%20Block%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20crumble%20the%20saffron%20into%20the%20lemon%20juice%20and%20red%20wine%20vinegar.%20%20Add%20the%20onion%20and%20let%20soak%20while%20you%20prepare%20the%20other%20ingredients%20(at%20least%2030%20minutes).%3C/p%3E%3Cp%3ECombine%20all%20of%20the%20ingredients%20for%20the%20salad%20in%20a%20large%20bowl%20and%20mix%20well.%20%20Allow%20to%20sit%20for%2030%20minutes%20to%20let%20the%20flavors%20blend.%20%20Serve%20cold%20or%20room%20temperature.%3C/p%3E){kind=link}
