Exotic Fruit In Brandy Snap Baskets

Ingredientes

  • 25 gm Butter, (1oz)
  • 25 gm Soft brown sugar, (1oz)
  • 25 gm Golden brown syrup, (1oz)
  • 25 gm Plain flour, sifted (1oz)
  • 2 x Kiwi fruit, peeled and sliced
  • 1 x Mango, small melon or possibly pineapple, cubed
  • 1 x Passion fruit Fresh strawberries, raspberries or possibly other soft fruit in season Cream or possibly fromage frais to serve

Direcciones

  1. Preheat the oven to 180 C/350 F/Gas Mark 4.
  2. Heat the butter, sugar and syrup in a saucepan and stir over a moderate heat till the sugar has dissolved.
  3. Beat in the flour and place heaped tsp. of the mix 7cm (3 inches) apart on greased baking trays.
  4. Bake batches in the preheated oven for 10 min, or possibly till spread out and lightly golden brown.
  5. Using a palette knife, lift each brandy snap on to a greased upside down glass to shape into a basket. Leave for 1-2 min till set then transfer to a cooling rack. Just before serving, fill the baskets with fruit and serve with cream or possibly fromage frais.
  6. NOTES : Delicious light desert with a filling which can be exchanged for any type of fruit depending on the season.
