.%20%20Manageable%20amounts.%3C/p%3E%3Cp%3EThat%20still%20left%20us%20buying%206%20pints%20of%20milk.%20%20Lots.%20%20Mind%20you,%20milk%20is%20hardly%20an%20expensive%20ingredient%20if%20you're%20going%20to%20play%20with%20something.%20%20But%20it%20brings%20home%20how%20much%20we%20as%20a%20society%20must%20use,%20really.%3C/p%3E%3Cp%3ESo.%20%20The%20ricotta%20is%20easyeasy.%20%20I%20don't%20think%20I'll%20ever%20buy%20it%20again,%20it%20was%20so%20easy.%20%20The%20recipe%20I%20used%20was%20one%20I%20clipped%20from%20a%20few%20lines%20on%20David%20Lebovitz's%20wonderful%20blog,%20that%20runs%20as%20follows:%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EMethod%3C/p%3E%3Cp%3EIn%20a%20large%20pot,%20bring%20the%20milk,%20yogurt,%20heavy%20cream%20(if%20using),%20vinegar,%20and%20salt%20to%20a%20boil.%20Very%20gently%20boil%20for%20one%20to%20two%20minutes,%20until%20the%20milk%20is%20curdled.%3C/p%3E%3Cp%3E(looks%20horrid,%20right?)%3C/p%3E%3Cp%3EMeanwhile,%20line%20a%20strainer%20with%20a%20few%20layers%20of%20cheesecloth%20(we%20actually%20HAD%20cheesecloth,%20I%20always%20find%20it%20hard%20to%20get%20hold%20of%20-%20a%20very%20old%20very%20clean%20worn%20cotton/linen%20tea%20towel%20also%20works,%20it's%20usually%20possible%20to%20find%20something)%20and%20set%20it%20over%20a%20deep%20bowl.%20%20Pour%20the%20milk%20mixture%20into%20the%20strainer%20and%20let%20drain%20for%2015%20minutes.%20Gather%20the%20cheesecloth%20around%20the%20curds%20and%20squeeze%20gently%20to%20extract%20any%20excess%20liquid.%3C/p%3E%3Cp%3EStorage:%20Homemade%20ricotta%20is%20best%20served%20slightly%20warm,%20although%20it%20can%20be%20refrigerated%20for%20up%20to%20three%20days,%20if%20desired.%3C/p%3E%3Cp%3EThis%20tasted%20fantastic.%20%20We%20ate%20quite%20a%20lot%20of%20it%20just%20standing%20there.%20%20Joy%20turned%20it%20into%20a%20rather%20lovely%20looking%20cheesecake%20afterwards,%20with%20raspberries.%3C/p%3E%3Cp%3EThe%20mozzarella%20recipe%20came%20from%20this%20book%20by%20Barbara%20Kingsolver,%20which%20looks%20lovely%20and%20which%20I%20will%20borrow%20from%20Joy%20at%20some%20point%20when%20I%20can%20reliably%20be%20in%20the%20same%20county%20for%20any%20length%20of%20time.%3C/p%3E%3Cp%3EIt's%20an%20American%20book,%20but%20lovely.%20%20The%20mozzarella%20recipe%20called%20for%20rennet%20and%20citric%20acid,%20which%20took%20a%20little%20finding.%20%20Big%20supermarkets%20sometimes%20have%20the%20rennet,%20as%20do%20health%20food%20shops.%20%20We%20pinched%20a%20little%20citric%20acid%20from%20a%20friend%20(Mr%20Loxley)%20who%20had%20been%20using%20it%20for%20making%20elderflower%20cordial,%20but%20otherwise%20would%20have%20resorted%20to%20the%20internet.%20%20Apparently%20it's%20quite%20hard%20to%20get%20hold%20of%20because%20it's%20a%20substance%20used%20to%20cut%20drugs%20with.%20%20We%20did%20not%20cut%20drugs,%20just%20cheese.%20%20Anyway.%20%20You%20also%20need%20a%20temperature%20probe.%20%20Joy%20bought%20one%20this%20time,%20I%20keep%20breaking%20them.%20%20Not%20sure%20what%20to%20do%20about%20that...%20%20Recipe%20follows:%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E4%20pints%20fresh%20whole%20milk%20(not%20UHT%20or%20anything)%3C/p%3E%3Cp%3E%C2%BE%20teaspoon%20citric%20acid,%20dissolved%20in%2050ml%20of%20cold%20water%20-%20used%20bottled,%20unchlorinated%20water%3C/p%3E%3Cp%3E%C2%B9%E2%81%848%20teaspoon%20liquid%20rennet%20dissolved%20in%2050ml%20cold%20water%20(again,%20mineral%20water)%20-%20we%20found%20that%20the%20VegeRen%20we%20were%20using%20seemed%20to%20have%20a%20different%20concentration%20to%20the%20stuff%20the%20recipe%20was%20apparently%20using,%20and%20so%20just%20had%20to%20guess.%20%20We%20used%2030%20drops%20in%20the%20end,%20which%20was%20probably%20too%20much,%20I'm%20not%20sure.%20%20I%20want%20to%20read%20a%20bit%20more%20about%20the%20enzyme%20action%20-%20I%20THINK%20you%20can%20probably%20just%20keep%20adding%20until%20it%20suddenly%20starts%20to%20curdle,%20because%20I%20think%20it's%20a%20catalysis%20reaction%20going%20on%20but%20I%20need%20to%20know%20more.%20%20Anyone%20with%20any%20ideas%20let%20me%20know...%3C/p%3E%3Cp%3E1%20tsp%20salt%3C/p%3E%3Cp%3EMethod%3C/p%3E%3Cp%3EAll%20in%20all%20great%20fun,%20and%20like%20I%20said%20the%20ricotta%20in%20particular%20is%20a%20perfect%20recipe.%20%20To%20be%20repeated.%3C/p%3E){kind=link}
