%3C/p%3E%3Cp%3EWe're%20getting%20ready%20to%20head%20out%20for%20Labor%20Day%20weekend.%20But%20first:%20It's%20the%20hubby's%20birthday!%20Hooray!%20I%20love%20birthdays.%3C/p%3E%3Cp%3EThe%20hubby%20doesn't.%20He%20would%20prefer%20that%20his%20birthday%20be%20celebrated%20within%20the%20vacuum%20that%20is%20our%20household,%20perhaps%20with%20a%20few%20other%20family%20members.%20But%20no%20bru-ha-ha.%20(And%20he%20means%20it.%20This%20isn't%20one%20of%20those%20reverse%20psychology%20%22No,%20REALLY,%20no%20need%20to%20celebrate%22%20kinds%20of%20things.)%3C/p%3E%3Cp%3EHe%20does,%20however,%20like%20presents%20and%20chocolate%20cake.%20I%20wrapped%20up%20plenty%20of%20the%20former,%20and%20decided%20to%20make%20him%20a%20really%20decadent%20cake.%20This%20recipe%20is%20from%20the%20Famous%20Dave's%20Backroads%20and%20Sidestreets%20cookbook.%20It's%20actually%20an%20espresso%20chocolate%20cake,%20but%20the%20hubby's%20not%20a%20big%20coffee%20fan.%20So%20I%20use%20the%20brewed%20espresso,%20but%20substitute%20mocha%20powder%20for%20the%20espresso%20powder.%3C/p%3E%3Cp%3EWe%20first%20attempted%20this%20cake%20in%20approximately%20the%20year%201%20B.S.M.%20(Before%20Stand%20Mixer).%20I'd%20definitely%20recommend%20a%20good%20mixer.%20The%20cake%20has%20a%20lot%20ingredients,%20and%20makes%20a%20gazillion%20dirty%20dishes.%20(I%20lost%20count%20at%20six%20mixing%20bowls.)%20But%20if%20you've%20taken%20the%20day%20off%20work%20just%20to%20make%20your%20hubby%20a%20birthday%20cake,%20this%20is%20the%20cake%20to%20make.%3C/p%3E%3Cp%3EFamous%20Dave's%20Chocolate%20Cake%3C/p%3E%3Cp%3EServes%208-10%3C/p%3E%3Cp%3ECake%3C/p%3E%3Cp%3E1.%20Preheat%20oven%20to%20350%20degrees.%20Grease%20and%20flour%20two%208%22%20cake%20pans.%3C/p%3E%3Cp%3E2.%20For%20cake,%20in%20a%20medium%20bowl,%20mix%20flour,%20sugar,%20espresso%20powder,%20baking%20soda,%20salt,%20and%20baking%20powder.%3C/p%3E%3Cp%3E3.%20In%20a%20small%20bowl,%20dissolve%20cocoa%20in%20brewed%20espresso.%20Stir%20well.%20Add%20vanilla%20and%20almond%20extracts.%3C/p%3E%3Cp%3E4.%20In%20a%20medium%20bowl,%20whisk%20together%20buttermilk,%20mayonnaise,%20egg%20yolks,%20and%20canola%20oil.%20Stir%20in%20cocoa%20mixture.%3C/p%3E%3Cp%3EOh,%20and%20prepare%20yourself%20for%20a%20lot%20of%20pictures%20of%20bowls%20and%20mixers.%3C/p%3E%3Cp%3E5.%20Combine%20butter%20and%201/2%20c.%20of%20the%20buttermilk%20mixture%20in%20a%20mixer%20bowl.%20Mix%20well.%3C/p%3E%3Cp%3E6.%20Add%20flour%20mixture*%20and%20beat%20on%20low%20speed%20just%20until%20moistened.%20Beat%20at%20medium%20to%20high%20speed%20for%201%201/2%20minutes.%3C/p%3E%3Cp%3E*This%20is%20where%20my%20instinct%20wants%20to%20override%20the%20recipe.%20I've%20been%20told%20that%20the%20best%20way%20to%20mix%20a%20cake%20is%20to%20alternate%20adding%20the%20liquid%20and%20dry%20ingredients,%20mixing%20after%20each%20addition.%20I%20followed%20the%20recipe,%20and%20my%20cake%20had%20a%20few%20issues,%20which%20you'll%20hear%20about%20later.%20Next%20time,%20I'll%20try%20alternating%20and%20see%20what%20happens.%3C/p%3E%3Cp%3E7.%20Add%20the%20remaining%20buttermilk%20mixture,%201/3%20at%20a%20time,%20beating%20for%2020%20seconds%20after%20each%20addition.%3C/p%3E%3Cp%3E8.%20Spoon%20batter%20into%20pans.%20Bake%20about%2040%20minutes,%20or%20until%20a%20toothpick%20comes%20out%20clean.%3C/p%3E%3Cp%3E9.%20Cool%20cakes%20in%20pans%20on%20wire%20racks%20for%20about%2010%20minutes.%20Invert%20onto%20wire%20racks%20to%20cool.%20Cool%20completely%20before%20frosting.%3C/p%3E%3Cp%3E10.%20For%20frosting,%20heat%20chocolate%20and%20butter%20in%20a%20small%20saucepan%20over%20low%20heat,%20stirring%20frequently.%20Remove%20from%20heat.%20Add%20espresso%20powder,%20vanilla%20and%20almond%20extracts,%20and%20salt.%3C/p%3E%3Cp%3E11.%20In%20a%20mixer%20bowl,%20combine%20cream%20cheese%20and%20cream.%20Beat%20on%20medium%20speed%20until%20smooth.%3C/p%3E%3Cp%3E12.%20Stir%20the%20chocolate%20mixture%20into%20the%20cream%20cheese%20mixture,%20and%20beat%20until%20blended.%3C/p%3E%3Cp%3E13.%20Add%20powdered%20sugar%20gradually,%20beating%20until%20thoroughly%20combined%20and%20of%20spreading%20consistency.%3C/p%3E%3Cp%3E14.%20Move%20one%20cake%20to%20a%20serving%20plate.%20Top%20with%20about%201/2%20c.%20frosting.%20Add%20second%20layer,%20and%20frost%20entire%20cake.%20(You%20might%20have%20extra%20frosting.)%3C/p%3E%3Cp%3EAin't%20she%20purty?%3C/p%3E%3Cp%3EAlthough%20he's%20going%20to%20laugh%20when%20he%20sees%20this.%20My%20cake%20had%20some%20structural%20integrity%20issues.%20I%20was%20almost%20done%20frosting%20it,%20when%20a%20large%20piece%20of%20the%20top%20layer%20just%20inexplicably%20fell%20off.%20Despite%20my%20best%20attempts%20with%20frosting%20%22glue,%22%20it%20couldn't%20be%20repaired.%20I%20ate%20the%20debris%20and%20attempted%20to%20cover%20up%20the%20problem%20spot%20with%20extra%20frosting.%3C/p%3E%3Cp%3EIt's%20really%20good%20frosting.%3C/p%3E){kind=link}
