Fancy Burekas stuffed with mushrooms

I grew up eating borekas with so many different stuffings.
But the Mushrooms are by far my favorite.
I decided to give it a little twist by making the puff pastry fancy look.
If you are planning a summer party or just because.... These are a great starters....

Ingredientes

  • 1 bag of puff pastry sheets ( if frozen it need to be thawed)
  • For the stuffing:
  • 1/2 cup thin slices of shallots
  • 3 tablespoons olive oil
  • 1 cup of thin slices of mix white and baby portobello mushrooms
  • 1/2 Tspn black pepper
  • 1 Tspn kosher salt
  • 2 Tspn of corn starch mixed with 1/4 cup of hot water
  • 1/4 cup chopped parsley ( optional)
  • 1/4 Tspn grated nutmeg
  • 1 egg whisked for coating the borekas b4 going to the oven

Direcciones

  1. in a medium skillet add 2 tblspn olive oil
  2. Add shallot cook on medium heat for five mins ;
  3. Add mushrooms and cook for 3-4 mins
  4. Add last tablespoon of oil and all spices and cook for another min
  5. Add mixed cornstarch and cook for 2 mins
  6. Remove from heat and let it cool
  7. In the mean time preheat over to 375F
  8. Cut rectangular to 5x4 inches and the thickness should be about 1/8 inch
  9. With a sharp thin knife cut in diagonal lines starting from one corner of the square to the other end. Repeat with the rest of the squares
  10. make sure not to cut all the down just enough to create grooves .
  11. Flip the square to the other side spoon in 1 1/2 tailspin in the center of each square fold into half to meet the other end press lightly to seal the edges. Brush with egg and bake for 25-35 mins until nice golden brown
  12. Serve with humus and mix green salad.
