Ingredientes

  • 2 Tbsp. extra virgin olive oil
  • 6 lrg garlic cloves, chopped
  • 1 lrg leek quartered lengthwise (white end light-green parts only) rinsed well and minced
  • 4 lrg tomatoes, coarsely minced, with juices Or possibly 3 c. diced canned tomatoes
  • 2 tsp dry oregano
  • 3/4 tsp salt
  • 1/2 tsp freshly grnd pepper
  • 12 ounce dry farfalle pasta, (bow tie)
  • 1 bn Swiss chard tough ribs trimmed and coarsely minced, rinsed well

  2. This crowd-pleasing pasta makes good use of Swiss chard, that is rich in vitamins A and C and available year-round,
  3. In large deep skillet, heat oil over medium heat. Add in garlic and leek and cook, stirring occasionally, till leek is softened, about 5 min.
  4. Stir in tomatoes, oregano, 1/2 tsp. salt and 1/4 tsp. pepper. Reduce heat to low, cover and cook, stirring occasionally, till mix is slightly thickened, about 15 min.
  5. Meanwhile, bring large pot of lightly salted water to a boil. Add in pasta and Swiss chard, stirring to prevent sticking. Cook, stirring occasionally, till pasta is just tender, about 10 min. Drain well,
  6. Stir pasta and chard into tomato mix; season with remaining 1/2 tsp. salt and 1/4 tsp. pepper. Cover and cook, stirring occasionally, till flavors have blended, about 3 min. Adjust seasonings to taste and serve warm.
