- This crowd-pleasing pasta makes good use of Swiss chard, that is rich in vitamins A and C and available year-round,
- In large deep skillet, heat oil over medium heat. Add in garlic and leek and cook, stirring occasionally, till leek is softened, about 5 min.
- Stir in tomatoes, oregano, 1/2 tsp. salt and 1/4 tsp. pepper. Reduce heat to low, cover and cook, stirring occasionally, till mix is slightly thickened, about 15 min.
- Meanwhile, bring large pot of lightly salted water to a boil. Add in pasta and Swiss chard, stirring to prevent sticking. Cook, stirring occasionally, till pasta is just tender, about 10 min. Drain well,
- Stir pasta and chard into tomato mix; season with remaining 1/2 tsp. salt and 1/4 tsp. pepper. Cover and cook, stirring occasionally, till flavors have blended, about 3 min. Adjust seasonings to taste and serve warm.
