%20and%20interesting%20Indian%20breads.%20Especially%20breads%20I%20can%20serve%20at%20Indian%20banquets.%20It%20seems%20that%20my%20Indian%20banquets%20always%20begin%20with%20me%20at%20the%20stove%20frantically%20sticking%20my%20hands%20in%20the%20fire%20(yes,%20I%20have%20almost%20no%20nerve%20endings%20left%20after%2020%20years%20of%20doing%20this)%20making%20chapattis%20at%20the%20last%20minute%20so%20they'll%20be%20nice%20and%20hot%20and%20puffy.%20By%20the%20time%20I'm%20finished,%20my%20make-up%20is%20usually%20a%20sweaty,%20runny%20mess,%20my%20hair%20has%20frizzed%20up,%20and%20I%20totally%20get%20why%20kitchen%20wallahs%20are%20left%20in%20the%20kitchen%20after%20the%20food%20has%20been%20prepared.%20Who%20wants%20to%20look%20at%20that?%20However%20I%20have%20to%20make%20my%20way%20to%20the%20table%20and%20hostess.%20So,%20when%20I%20ran%20across%20a%20bread%20that%20had%20originated%20by%20being%20left%20in%20the%20desert,%20buried%20under%20sand%20all%20day%20and%20unearthed%20for%20eating%20later,%20I%20was%20so%20there.%20They%20had%20me%20at%20left%20all%20day.%3C/p%3E%3Cp%3EThe%20bread%20I'm%20talking%20about%20is%20called%20Baati%20and%20is%20a%20specialty%20of%20the%20state%20of%20Rajastan.%20Translated,%20Rajasthan%20%20means%20The%20Land%20of%20the%20Kings,%20and%20the%20people%20of%20the%20region%20were%20renowned%20for%20%20their%20warrior%20skills%20and%20chivalry.%20What%20can%20you%20say%20about%20a%20bread%20that%20was%20traditionally%20made%20by%20some%20of%20the%20fiercest%20warriors%20of%20the%20sub-continent%20and%20left%20to%20bake%20under%20desert%20sands%20all%20day%20with%20a%20marker%20to%20guide%20them%20back%20to%20bread%20deliciousness%20when%20all%20the%20conquering%20was%20done?%20Nifty?%20Ingenious?%20Try%20On%20the%20Menu!%20%20%20%20%20These%20guys%20were%20not%20just%20Kings%20of%20Rajasthan.%20To%20me%20they%20were%20the%20Kings%20of%20Make-Ahead%20which%20of%20course%20is%20one%20of%20my%20favorite%20lands.%3C/p%3E%3Cp%3EMaharana%20Pratep%20Singh%2016th%20Century%20Ruler%20of%20Rajahstan%3C/p%3E%3Cp%3ESo,%20I%20thought%20going%20into%20my%20New%20Years%20Eve%20bash%20that%20if%20I%20baked%20Baati,%20my%20makeup%20might%20possibly%20stay%20on%20my%20face%20instead%20of%20giving%20me%20Marilyn%20Manson%20eyes.%20%20I%20really%20hadn't%20cooked%20many%20dishes%20from%20Rajasthan%20before.%20It's%20a%20area%20with%20a%20great%20deal%20of%20desert%20and%20a%20very%20arid%20climate.%20The%20food%20is%20mainly%20vegetarian,%20focusing%20on%20lentil%20dishes.%20Ghee%20abounds,%20and%20since%20there%20is%20not%20a%20lot%20of%20water%20readily%20available,%20they%20make%20up%20for%20it%20by%20using%20milk,%20buttermilk%20and%20ghee%20to%20cut%20down%20on%20the%20amount%20of%20water%20needed%20for%20cooking.%20It's%20a%20rich%20and%20complex%20cuisine.%3C/p%3E%3Cp%3EBaati%20is%20traditionally%20served%20with%20dal,%20but%20it%20can%20also%20accompany%20other%20curry%20dishes%20and%20sometimes%20is%20even%20stuffed%20like%20a%20samosa%20for%20a%20hearty%20complete%20meal.%20The%20Baati%20I%20made%20was%20just%20a%20simple%20bread,%20and%20once%20the%20dough%20is%20set%20can%20be%20popped%20in%20the%20oven%20on%20a%20baking%20sheet%20with%20very%20little%20effort.%3C/p%3E%3Cp%3EBaati,%20Indian%20Bread%3C/p%3E%3Cp%3EHere's%20what%20to%20do:%3C/p%3E%3Cp%3EThis%20recipe%20makes%20about%2016%20Baati,%20they're%20small%20but%20full%20of%20ghee%20so%20you%20may%20want%20to%20halve%20this%20amount.%3C/p%3E%3Cp%3EMake%20a%20little%20space%20in%20the%20center%20of%20the%20dough,%20pour%20in%201%20and%201/3%20cup%20of%20water%20and%20mix%20it%20around.%3C/p%3E%3Cp%3EWhen%20the%20water%20is%20all%20mixed%20in,%20knead%20the%20mixture%20into%20a%20nice%20soft%20dough.%3C/p%3E%3Cp%3ECover%20the%20dough%20with%20a%20damp%20cloth%20and%20set%20it%20aside%20for%2010%20minutes.%3C/p%3E%3Cp%3ENow%20for%20the%20fun%20part%20(the%20ghee!)%3C/p%3E%3Cp%3ETake%20the%20cloth%20off%20of%20the%20dough%20and%20gradually%20drizzle%20into%20it%201/3%20cup%20of%20melted%20clarified%20butter%20or%20ghee.%3C/p%3E%3Cp%3EKnead%20it%20in%20well.%3C/p%3E%3Cp%3EThen%20cover%20it%20again%20with%20the%20damp%20cloth%20and%20let%20it%20take%20another%2010%20minute%20nap.%3C/p%3E%3Cp%3ENow%20the%20dough%20is%20ready%20to%20be%20shaped.%20Divide%20the%20dough%20into%2016%20small%20balls%20and%20place%20them%20on%20a%20greased%20baking%20sheet.%3C/p%3E%3Cp%3ECover%20them%20with%20a%20damp%20cloth%20and%20let%20them%20sit%20for%20another%2010%20minutes.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20degrees.%3C/p%3E%3Cp%3EFlatten%20each%20ball%20slightly,%20cover%20them%20and%20keep%20'em%20aside%20till%20you're%20ready%20to%20bake.%3C/p%3E%3Cp%3EWhen%20you%20are%20ready%20to%20bake%20them,%20put%20them%20into%20the%20oven%20for%20about%2018%20minutes%20or%20so.%3C/p%3E%3Cp%3ENow%20for%20the%20fun%20and%20guilty%20part.%20When%20these%20little%20gems%20come%20out%20of%20the%20oven,%20poke%20them%20with%20your%20finger,%20crack%20the%20crust%20a%20bit%20and%20drizzle%20each%20with%20some%20more%20of%20the%20ghee.%20Hey,%20if%20you're%20busy%20defending%20your%20kingdom%20from%20marauding%20hordes,%20don't%20worry%20about%20the%20ghee...%20you'll%20work%20it%20off.%3C/p%3E%3Cp%3EOkay,%20I%20just%20couldn't%20leave%20these%20delightful%20little%20morsels%20alone.%20I%20had%20a%20bit%20of%20leftover%20dough%20so%20the%20next%20day%20I%20decided%20to%20pair%20this%20bread%20with%20a%20couple%20of%20vegetable%20dishes%20and%20experiment%20with%20removing%20the%20extra%20ghee.%20I%20took%20my%20dough,%20rested%20it%20and%20then%20flattened%20it%20a%20bit%20more%20than%20I%20had%20the%20night%20before.%3C/p%3E%3Cp%3EI%20baked%20them%20and%20served%20them%20ghee%20free.%3C/p%3E%3Cp%3EThere%20they%20were%20denser%20than%20a%20chapatti,%20not%20risen%20like%20naan%20bread%20they%20were...Baati!%20I%20pulled%20one%20apart,%20it%20opened%20full%20of%20steamy%20flaky%20goodness.%3C/p%3E%3Cp%3EI%20could%20see%20that%20all%20sorts%20of%20tasty%20morsels%20could%20be%20made%20to%20fit%20inside,%20they%20were%20little%20pockets%20of%20whole%20wheat%20goodness,%20and%20of%20course%20since%20they%20weren't%20drizzled%20with%20ghee%20I%20felt%20so%20virtuous%20eating%20them.%3C/p%3E%3Cp%3EDid%20they%20work%20on%20the%20table?%20Yes%20they%20did.%20Would%20I%20make%20them%20again,%20absolutely!%20In%20fact%20I%20can't%20wait%20to%20serve%20them,%20this%20time%20as%20part%20of%20the%20traditional%20Rajasthani%20Dal%20Baati%20Churma%20meal.%20Because%20everybody%20needs%20some%20Baati%20sometime.%20Sorry,%20I%20just%20couldn't%20help%20myself.%3C/p%3E){kind=link}
